Really Good Christmas Cake Recipe - And The Way We Make Ours : - )

- Christmas cakes in Ireland are delicious heavy fruit cakes (often with added spirits), iced and decorated. Sandra didn't know what to make of them when she first moved here. I'm happy to say that she took to them immediately and now makes one every year.

There's quite a bit of German in this video - which is a good thing, surely? : - ) And here's the recipe..
10oz (280g) currants
6oz (170g) sultanas
3oz (85g) raisins
3oz (85g) glace cherries
3oz (85g) mixed peel
3oz (85g) dried apricots
2 tablespoon of whiskey, rum or brandy
2oz (55g) chopped nuts
4 eggs
6oz (170g) butter
6oz (170g) soft brown sugar
grated rind of 1 lemon and 1 orange
3 1/2 oz (100g) self raising flour
3 1/2 oz (100g) plain flour
2 oz (55g) ground almonds
1 1/2 teaspoons of mixed spice
1 tablespoon of golden syrup
Bake at 150-160 degrees Celsius

There is no better example of the joy of cooking with friends and family.
Reminds me of my mother’s Jamaican rum cake. Your kitchen is like hers, always open and full of good food and laughter.
The crunchyness of the nut when it was chopping made me starving.
I use a recipe that is 99.5% like yours, I've learned it from my Northern Irish mother in law. The main difference would be, I make the cake 8 week in advance of Christmas Eve and store it in a round biscuit tin, I open the tin once a week and feed it more brand or Kentucky whiskey (preference) and only ice it a couple of days before use. Never ever eat my Christmas cake and drive 😉

My Mum was her local "wedding cake" maker. Very similar to this. I wonder how many she made. She had strong arms for mixing the very stiff mixture and retains that strong grip in her nineties. Last year we made her marmalade recipe. The only thing was that the method was all in her head and time had taken its toll on her remembering the intricacies . As we "googled" the details and worked our way through the process I loved watching her come to recognize all the steps. So nice to share major cooking events.

Thanks for the video! My mum makes her cakes with poitin (she doesn't drink). You have to stand well back because of the alcohol haze when the cakes are unwrapped for icing! They are the best Christmas cakes I've ever tasted though so the poitin is worth it. Once a visitor (a Garda Sergeant) praised the cake and my Dad informed him of the secret ingredient - Mum was mortified and fled the room puice in colour!
That's a good story! We have a bottle of poitin here, it was given to us, but it smells so strong that you could run a car on it probably.
the four people who thumbed down must be upset they didn't had a piece of that lovely cake! lol

I made this fruit cake for Christmas after watching your video. I made two, one to have the extra liquor added and the other left without for my tee-totaller grandparents. Both cakes came out a little burnt (will mind them better next time), I didn't have time to frost them, and I didn't really care for the whiskey-damped cake (too bitter for me), but the 'virgin' one was so delicious. I am eating it for breakfast now! It was well-liked by most of my family, so I intend to make Christmas fruitcake part of our holiday tradition.

Thanks for the recipe. They are out of the oven! I have never baked by weight before. In N A we bake by volume. In my cake research I have heard the term”feed the cake”in reference to the weekly baste with spirits. All the best.

Like the Jamaican black rum / fruit cake. Mom soaks the fruit for days and then the baked cake for about 2 weeks in Jamaican rum.

Lovely video. I usually make very similar cakes, mostly to a recipe similar to Delia Smith's in batches of 4 at once. This complicates the cooking as the two on top are ready before the two on the bottom. I also cut a hole in the top grease proof paper & use treacle (molasess) rather than golden syrup & more flour, all plain, but more similarities than differences. It is amazing how long these cakes keep & how they improve with age. I have eaten delicious cakes over a year old.
Yes, it makes sense to bake more than one, to use the oven heat. Have you tried switching the cakes around in the oven half way through the baking time?
Way Out West Blow-in blog Hadn't thought of moving positions, good idea. My method has been to get the top two ready, then move up the bottom two, but perhaps switching positions would help, although having to open the oven & temporarily store at least one while the switch is in progress will drop the temperature. Dunno, maybe worth a try. Interestingly even in a fan oven there is a difference between bottom & central so perhaps if I switch there could still be a delay. Thanks for the suggestion.

Man, german is kind of weird for a swede to hear. Many words are so similar that you can figure them out straight away (some are nearly identical!), but whole sentences are hard to understand, partly because the grammar is so different. It's quite a beautiful language when spoken by someone who doesn't sound angry...! Nice video, as per usual. :)
Thank you. Isn't that interesting about the similarities and differences of German and Swedish?! I tried to learn Swedish once, but when I realised that the words are similar but the grammar isn't, I kind of gave up and concentrated on English...as there aren't many Swedes living here...
Yes, someone shouting Achtung! at you a few times tends to be offputting. Swedish makes me laugh, it has such a melody!
Yes, learning Swedish would be of very limited use for most germans... Germans who immigrate to Sweden tend to pick it up very quickly and speak it well, though! I think the other way round probably applies too. It's interesting that even though the Nordic languages are very much their own sub-group, all Germanic languages are remarkably similar. I can understand Dutch even better than German, especially in writing, and generally get the gist of what's being said without studying either language at all.
oh and you are German! that is my other half of ancestry. German and Irish. kindred spirits.
Not a fan of Christmas fruit cake - but the Cognac certainly is a bonus! :)
I prefer Spekulatius, Dominosteine, Vanillekipferl, Kokosmakronen, Linzer Törtchen, and most of the other German cookie variants. Many traditionally made at home with the kids...
All those you mention will be baked shortly in our kitchen as well, now that the Christmas Cake is stored away!

Looks a great cake but as an alternative to all the sugary marzipan and icing decorate the cake before baking with halved almonds, cherries and walnuts. After baking and while the cake is still warm glaze this with melted apricot jam.
A good alternative...although there's nothing more yummy than peeling the sweet chewy marzipan off the cake and washing it all down with a nice cup of tea!
I've gone right off sugary stuff so marzipan and icing doesn't do anything for me, but a rich fruit cake with lots of nuts and alcohol is a winner!
Ahhh.....no wonder, you have such a beautiful voice my dear buddy, but I was thinkin' to myself it doesn't sound irish, so you're german, a beautiful german lady living in Beautiful Eire!
