my slow n sear always shoots up in temperature and seems to light more coals than it should (all along the bottom) I cant seem to get it under control at all at times other than remove heaps of the lit charcoal.... not a fan so far of it despite all the hype

sounds like you may have some air leaks getting into your kettle?
Make sure you completely close the bottom vent.
