How To Make Fresh Venison Sausage

- Home processing meat isn't difficult. In this video we provide detailed instruction on how to grind and stuff the venison from wild game we took into delicious breakfast and Italian sausages. It's a great way to fill the time between deer hunting season and spring turkey hunting an fishing season. Doing it yourself can also save you quite a bit of money, as opposed to taking your deer to a butcher! You can even use some of that meat you have frozen and don't know what you want to make with it. If you don't hunt, or had a slow season, this method will work just as well with meat from your local butcher shop!

I enjoyed your video. I like to use a c clamp to hold the stuffer to table so you can use free hand to direct the mile of sausage coming out ha. Thanks for tip on letting the meat absorb seasoning inside the casing. You may have saved my learning the hard way on that one. Where were you all the other times I learned that way? Ha Ha have a great winter from North Bay Ontario.
That's a great idea to hold the stuffer in place. Seems like we're helping each other out here! Gonna try that this year, Dana just nailed another 8 point buck this past Friday, so we're stocked enough to make some more sausage this year for sure!

That's a great idea for the off season! Always at a loss as to what to film this time of year, not much going on in the way of hunting, fishing, or herping right now. We had the breakfast this morning, with some eggs, and will have them again tomorrow with pancakes, they're really good, and we had a tiny bit of Italian left over that wouldn't make a whole link, so we made patties and pan cooked it. Very good, but I can't wait to get those links on the grill!

I'd like to see you make some using your own seasoning recipe, and grillin' and chillin'.
I did that a number of years ago, and it was less than spectacular. Not saying there are not great family recipes out there, just that the one I used wasn't that great. I'd like to find one, and do that, but I'd want to try it first. Once you commit to a seasoning, and put it in the meat, there's no turning back!
I understand completely. I'm glad you are not making any substandard sausages.
I know sometimes you can get your hanks from the meat departments and occasionally they will also sell their spice blends.
@@ForgetU It's possible, we get our fat from a butcher, and usually mail order the hanks. That's why we use the packaged seasonings.

Already coked up some of the breakfast sausages, and they were fantastic! Had them with eggs, and I'm going to have some more of them tomorrow with pancakes! We had a bit of meat left over that didn't fit in a casing, so we made some patties and pan cooked it. It was good that way, but I can't wait to get the links on the grill!

Sharing The Outdoors hahaha I’d really could go for a venison sausage pepper and onion sandwich right now. Come on September lol
My favorite is bratwurst. And I'm way to cheap to pay someone else $90 to process my venison for me. We also discovered CWD in our state, so cross contamination could be a problem. I'm guessing a lot of wild game processors might stop taking deer and elk, because if an animal tests positive they have to notify everyone who had game processed during the same time period.
Never thought about that. I guess it could become a problem. I never liked the idea of having a shop cross my deer with other folks game either. Not because of disease, or the cost so much as you just never know if your nice clean shot is getting mixed with gut shots that folks let lay overnight before recovery or what. Plus it's very satisfying to take everything from field to table yourself.
