    I made these last night and brought them to work and everyone loved them! They were moist, flaky and delicious. My coworker was saying how she always has trouble making a good biscuit that's not dry and crumbly and sticks to your mouth, these just melt in your mouth as soon as you eat them! Thank you Thomas for all the helpful tips, it was my first time making biscuits and just by following your advice they came out amazing :)

    I roll my dough out in a square, and cut them into squares to avoid handling the dough to much.

    this was super interesting- par usual! i've seen recipes that call for freezing the whole tray of biscuits for a few minutes before baking, i wonder if this actually makes much of a difference or not

    hah...those are some tiny biscuits...I make mine over double that size. I have a perfect recipe that turns out every time with 3 ingredients, white lily self rising flour, butter, and buttermilk, that's it. Also, if you don't have a processor just grate frozen butter. And should never touch the dough when rolling it out, it'll melt the butter...roll it when a pin and fold it over a couple times to add layers. I also find if you stick them in the fridge for a couple minutes before you bake them they turn out even better. White lily is the best cause its a very soft wheat.

      Grating frozen butter works, true about the hot hands, and twisting the cutter! no, no, baby. Video leaves something to be desired. Wasting about 1/3 of the recipe! goodness.

    4 cp AP flour
    4 tsp baking powder
    1 tsp baking soda
    1 tbs sugar
    1 tsp salt
    WISK
    2 sticks unsalted butted
    FOOD PROCESSOR + MIX
    1 1/2 cups buttermilk
    Mix everything together but DON”T OVERWORK
    Pat into a dough
    Form biscuits
    Bake @ 450 F for 12 min
    YUMMM

    Rather than place half of the flour mixture into the food processor with the butter, I place all of it in and pulse it a few times, then add my buttermilk directly into the food processor and pulse just until the dough comes together then turn out onto a floured surface. Much easier.

      Don't create scraps by rolling the dough out into the shape of a square and cut length wise and across with a long knife or bench scraper. This is a much better method than using a cookie cutter. If you place the buscuits in a perfectly fitted square pan to where they all hug each other they will rise really tall.

    Nope. Just use 2 cups of White Lily Self Rising flour and add enough heavy whipping cream to make a dough-probably 3/4 to 1 cup but I just eyeball it. Dough will look kind of fluffy. Turn out dough onto a lightly floured (plain flour) surface and form into a large ball. Pat or roll out to desired thickness. Cut out with biscuit cutter or just into squares. Bake at 420 on parchment lined baking pan. This makes really soft biscuits. If you want a firmer biscuit grate 3 tablespoons of butter into the 2 cups of flour and stir with spoon. Then add half and half to make a dough. Dough will again look kind of fluffy. Follow previous instructions the same. These are better for biscuit sandwiches.

      Make your own buttermilk buy adding a tablespoon of lemon juice or apple cider vinegar to your milk stir and let it settle for atleast 15mins, then use it as buttermilk 😉

    Thomas, would a combination of yogurt and milk work in place of buttermilk? If yes, then in what ratio? Also, would cake or pastry flour be more suitable for this.

      1 cup buttermilk = 1 cup plain yogurt or Greek yogurt.
      1 cup buttermilk = 1 cup plain kefir.
      1 cup buttermilk = ¾ cup sour cream + ¼ cup water or milk.
      1 cup buttermilk = 1 cup milk + 1 tablespoon lemon juice.

      and biscuts are usually fluffy, flakey, risen, light... and served with butter or gravy.

    Will it alter the recipe or outcome if I skip the food processor part and simply cut the butter into the flour leaving small chunks. I find this an extra set I'd rather skip, less dirty dishes the better!

      Tokyo Tail376 in the British vernacular biscuits are like cookies or dry pastries, but the biscuit termed here are almost a dinner roll and are usually eaten next to savory dishes (like the southern chicken and biscuits)

      The difference is that American biscuits, which are buttery and tender, are superior to British scones, which are dry and hard. Hope that helps.

      +AskTheTree Yes, biscuits are made plain, but you can serve them with sausage and gravy and butter if you like.

There are variations for garlic, herb, and cheese biscuits. Some people make these variations to compliment their meal's main dish. More often that not, biscuits are kept plain (like Thomas' recipe), and they're usually served with butter and honey. Some people also enjoy a spoonful molasses or sorghum on their biscuits.

    The dough looks a tad bit dry. I like my dough to be moist before I roll it. I always say, "know your oven." My biscuits would burn at 450d.

      +macoricio94 You can but just be careful not to work the dough too much or else those last few biscuits will be a bit tough. If you skip the round cutter and just press the dough out into a square or rectangle, you can cut out square biscuits with a knife, then you won't have any scraps left to re-roll. :)

      sallofatani it's basically the liquid that is strained from butter when heavy cream is being turned into butter. it's just like an acidic milk

      you can also make your own buttermilk if you don't have it in the fridge. just add 1 T of vinegar to 1 C milk. let sit for 5 mins.

    Great looking recipe. But this old woman will make them like she learned from Grandma. A bowl, hands and a fork. So much less mess and with a little practice the are just as flakey.

      Here too, and you never 'twist' the biscuit cutter, straight down, straight up so you don't mash the sides of the biscuits. 😉
