  • We have a friend, who works at a food bank. Where stores donate food, to help those in need. Sadly, they often end up having to toss out food that's expiring, or about to expire, because not enough people are taking advantage of the benefits available to them. Instead of tossing this 10# tube of ground beef in the trash, they dropped it off to us. We didn't have much time before it expired, and there's no way we can use 10# of ground beef in the course of a week. So we did one of our favorite quick easy meals, and turned it all into Taco Meat, and pressure canned it. Now we have a quick easy snack for the winter, when we don't feel like cooking. Pop open a can, toss in a pan and warming up, add some tortillas, cheese, salsa and you're no longer hungry!

    You should rotate your rag when wiping the rims of the canning jars. Watch your clip and basically it added to the next jar and was wiped on. It's a small detail sometimes overlooked. Love your channel and watch all videos !! Love ya

    Quicker way to get rid of the grease from the ground beef, use a turkey baster!

    I have canned 32 pounds of ground beef as I needed to clear out my freezer and make room for 90 pounds of beef from a cow my daughter and son-in-law had processed. Still have 30 pounds of leg quarters (I may only can 20 pounds so we can have a bag for a 4th of July cookout), 2 whole chickens and 3 turkey breasts left to cook and can. I left my ground beef plain so I could use it for tacos, spaghetti, etc.

      Make sure you use a pressure canner, not a water bath canner!

      @@RomanticImages if your heavy duty canning All American pressure canner is the best. It’s expensive but never needs gaskets. If you are ok doing small batches and I just bought a Nesco and a Carey 9.5 smart canner. Has to say smart canner in order for the temp to hit the mark. Watch Rose Red Homestead for more info! And good luck. Happy Canning. I just did 4 quarts of chicken in my Carey yesterday.

    Great! I should do this. I have only canned chicken so far, no other meat by itself. I wonder what my husband would say about me dragging out the canning stuff again? I just got it all put away. He hates having it all over the place! My next house will have a canning kitchen, if just for his sanity. Lol

      We got one of those Derksin buildings and turned it into my "project studio" lol. One end is a mini kitchen with a long counter and island, stove and sink and a used fridge we picked up for $40. The other end has my sewing machine and fabric collection, and another table for misc projects. SO NICE getting all that out of the main house! Just getting the 4 canners and bazillion jars and rings out of the kitchen was a lifesaver. :)

      I have a canning kitchen in my basement where the panty is located under the stairs with mega shelving. This is fantastic, kitchen remains clean and tidy! Would recommend this for all canners! Covid 19 took away social life and my guitar jamming/band sessions and has made the space available for canning which I truly believe is now necessary to have on hand. Started canning at age 65 and loving it!!!

    2023-9-18... 2:24 AM CST.. okay I haven't even started canyon yet because I'm going to sites like yours to learn, you got me completely confused.. with Canon your 10 lb of hamburger with taco seasoning... So after you fill the jars with your hamburger... Do you add Broth to it ... Then put it in the pressure cooker and let it cook the 90 minutes or you just leave it like that you just didn't show that part.. thank you so much for answering me but I haven't even started getting yet like I said I've been watching and learning...

    I am a newbie canner, but really want to can taco meat as we eat tacos once a month and would love to just grab a jar of taco meat to make things easy. My question is that the taco seasoning used in the video has the first ingredient listed as corn meal. Is this ok to can with? I was under the impression that starches were a no no. thanks for your help. Love your videos.

    Thanks for your great videos.
    I am getting ready to can a bunch of hamburger and i really like the idea of canning it already seasoned.
    I really dislike bland food.
    I am sure i will also can some with only onions and pepper since i add those to everything i use ground beef for.
    I also add red wine when i cook any red meat.
    Would it hurt for me to add some wine while browning the ground beef im going to can while i brown it?
    Just hesitant in case it will not work with canning since it would be a costly mistake if i mess up a batch of canned meat.

      Hi! I use onion soup mix mixed with water to can my ground beef. I also can spaghetti sauce with red wine in it. I let the spaghetti sauce cook for about 10 minutes before I put it in the jars to can. No problems.

    Since you went to the work of cooking the meat, why do you can it and not freeze it? Space?

      People drop in frequently or family comes home hungry. Thawing and frying meat takes awhile, if you have canned meat on hand you can have tacos on the table in 15 minutes.👍

      A. Quickly get a meal on the table.
      B. Cook/clean once for multiple meals.
      3. Canning uses energy once vs freezer continually.
      4. In case the power goes out.

    I LOVE having ground beef on my shelves! I think out of everything I can ground beef is my most used. Come to think of it I think I only have 1 pint left 😳. Still haven’t unpacked since our move. I must check on that! 😁

      Usually 1 pound per pint for most meats.

    Help!! Just finished canning my first batch of taco meat. There is about 2 inches of head space after canning. there was only the required 1 inch when I packed the ground meat in. Is this ok? Should I freeze it after it cools? it looks delicious.

      It's fine. The top will turn a bit darker but it is all still safe to eat. Wasnt sure if you ever got an answer.

    Happy Saturday Afternoon to you.
    QUESTION & Potential PROBLEM: Last summer I pressure canned (following the proper procedure) pint size jars of lentils that I had rehydrated. It is now March 3rd and I noticed that the top inch of the lentils are dark grey, almost black. This occurred in all of the jars. If I toss the discolored ones will the remaining lentils be safe to consume, OR, should I just toss them all?

      I'm sorry but hope you understand I can never advise if someone else's home canned food is safe. I didn't observe the process, but when in doubt my advice is throw it out.

      @@1870s YUP, that was the conclusion I came to. After all, they are only lentils, not something I spent a lot of money on. No sense taking a chance. I have already experience one Near Death accident. I don't think our Heavenly Father would appreciate me testing Him again. Thank you and God Bless

    Hi. I'm just learning. Other people are saying not to stack jars bc they will come unsealed. How do you have room for single stored jars?

      @ Patti Tillman - you can stack them just NOT directly on each other. Either put them back in the case boxes they came in & stack that way or use something thin as a layer between jars. IE: sturdy cardboard sheet, very thin luan wood, etc. You just don't want direct pressure on the middle of the lids. Don't leave the rings/bands on as support. Rings off & a sturdy divider between layers. Hope that helps. Happy canning!

    I have a question, maybe more of a comment. Why do you preseason your ground meat? I can a lot of ground meat, but never preseason for a couple reasons, first, preseasoning can, and in my case I have found, tends to taste stronger the longer it is in the jar, second, say I can 10 lbs of taco seasoned meat, 10 lbs of chili seasoned meat, etc, if I use up all my chili seasoned, and want to make more chili, and all I have left is taco seasoned meat, I am out of luck. If I just can the meat plain, I can use it for anything from tacos, chili, spaghetti, shephard's pie, etc, and season when I make my meal. I do the same with tomato sauce, can unseasoned, and then I can season for pizza, chili, soups, anything I want, and not have a shelf full of sauce that is already seasoned when I am not wanting that particular seasoned sauce. You can season plain canned ground meat for making anything after you can it, but you can't remove the seasoning from it once it is seasoned and then canned. Just curious as to your reason, and what you do in the case of wanting say chili seasoned, and all you have is taco seasoned canned meat?

      We love Tacos that's the easiest answer. It's our first choice for quick and easy meals and I still have a dozen jars of plain ground beef on the shelf

      Pooch1953 I can understand your reasoning, for your family. For me, I can spaghetti sauce, pizza sauce, salsa, etc for convenience’s sake. I love NOT having to worry about seasoning when I want to make dinner because I don’t love spending the time over and over. I’d rather just do it once and forget about it. I like just grabbing a jar and having dinner done within minutes. That said, I haven’t canned season meat before, so I guess I should do that and see what I think.

      @@cynthiafisher9907 Too each their own, I was just asking. I found from experience for me, when I made different seasoned jars, a lot of times I ran out of one type because the family liked one type in particular and was stuck with a lot left that could only be used for what they were seasoned for. Didn't do any good to make more of that type the next year, because as kids will do, "I don't like that, we always have that" came into use, so I ran out of a different one and had plenty of others left that they used too love.. As for doing it once, dropping in seasoning while cooking
      and stirring for whatever you are making only takes a second, not like cooking from scratch, and I always have ground meat for any recipe.

      @@1870s I have watched a lot of people can taco meat. And all have used store bought seasoning. Store bought seasoning has corn starch in it. From what I read your not sposta can that?? I make my own with no corn starch, supper easy. I just wonder why know one mentions that??

      You must run it through a pressure canner, it's the only safe way to kill botulism. Anything else is asking for disaster.

    I bought a unopened box 18qt oster roaster for $35 grins . I tried to brown same 10lb tube of hamburger like you did. It would only get hot on the sides so I watched a youtube vid of repairing the roaster. They only have heaters on the sides NOT bottom. How were you able to brown on the bottom of the roaster ? or was that a electric skillet ?

    I am curious how you like the end result. I have seen other RUclips canners post videos about what they will or won't can in the future, and ground meat was rarely at the top of the list for future canning. I have only ever canned chicken pieces (completely delicious!). So, I have not delved into canning ground meat. I am contemplating buying pork meat in bulk, and so far for canning I plan to order stew meat instead of ground. But I hear you on the food bank stuff. I have received a tremendous amount of blueberries from friends who use the food bank who don't have room for all of it, and we are just a little tired of blueberry jam over here!

      I have a glass top stove and have been using a 16qt pressure canner with no problems. I was told not to push the full canner across the surface (only lift) and was told it is safe to use. It is working for me.

    My new pressure canner is set up for 15 lb of pressure but I only need 10 is this a problem?

      10 lb is for canning at sea level. We are at about 1174 ft elevation so we can at 11 lbs pressure.

      It should come with different sized weights, to regulate pressure

    You missed a step. Cooked meat needs liquid added to safely process.

    canning question,, i have 3 chicken legs , i fry one and put it on the plate. the second one i fry up then put it in a mason jar and can it, the third leg i just can it then when i open it i fry it some to brown it and i put all three on the plate, will they all taste the same with the same texture??? thank you i don't want to make stew or anything eles with the meat, is it hte same with pork chops thank you

      I've never canned chicken on the bone, I'm not sure how it holds up. I would NOT believe canning fried anything would be a safe method of preservation

    Raw packing is faster

      It is not safe to Raw pack ground beef. And even cooked ground beef you're supposed to add water to it as well.

      Not for this batch. I did not add any liquid. I just put out a video in the last couple weeks where I did add beef broth.

    Canned foods should never be stacked because it can give a false seal.

      Sorry. I’ve never canned before. A little jittery about it. Have my moms old presto 21 quart canner. I remember her canning vegetables out of our garden when I was a kid. Bought a new seal and all. Just don’t want to poison my family.

      We have a ton of videos on how to. If you have questions, post. Us and others here will try to help you. It can be totally safe if you just follow instructions.
