Today I’am making Kinema (Fermented soybeans)which is ethic food of Rai’s and Limbu’s.
It is sticky,stinky pungent smell and unique fermented flavour.
The common word kinema is derived from “Kinamba”of the Limbu dialect in which’Ki’ means Fermentation and ‘Nambaa’ means Flavour.Thus it is assumed that the Kinema originated from Limbu communities,who reside in the eastern Himalayan region.
Ingredients for this Recipe
1kg Soybeans
Fermentation time 3 to 5 days
