Congratulations You miss out a few ingredients such as peanuts and sesame seeds but it's ok you're right is a lot of work but if you can't call yourself a cook or chef seriously until you try this recipe

So I just finished an authentic Mexican-taught molé recipe. The granny used Pasilla chiles, Ancho chiles, and Chipotles. She did NOT use Guajillo, Negro, and the other one this dude used.
There are so many different regions in Mexico & each region uses different ingredients. At the time the Indians served it to the Spaniards there three in this & that. I have a daughter who had food allergies and so I do substitutions & take out nuts but use other items in place of. I am hoping he puts in Mexican chocolate because that is what my husband's mother & grandmother used. Mainly used by the Indians that lived in the mountains. My grown children love it for Thanksgiving

I'd say the closest subs are underripe tomatoes and bananas. But I'd try it without and see how it turns out.

you should add some brown sugar to help balance the spiciness. Makes a big difference and your mole will be also darker.

Each of these chilies have different flavors, and none of them are particularly spicy. I'm not sure there's a good alternative.
They have mole in bottles already made with all the chil'...Dona Maria. And we reuse the bottle as glasses. They are nice

In the online recipient you said we needed chilihuacle negro chilies, but in the video you used guajillo chilies. Which one should I use?
If you can find the chilhuacle negro use that. It'll lend a smoky flavor and darker color. Pasilla is a common substitute outside of Mexico.
