I made this PIZZA from Scratch and this how it came out

- RECIPE PIZZA
*SAUCE:
1 Tbsp Oil
28 Ounces Tomato Sauce
2 Tbsp Tomato Paste
1 Tsp Dry Basil
1 Tbsp Fish sauce
*Pizza Dough:
1 Cup Warm Water
1 Tbsp Yeast
1 Tbsp Sugar
2 Cups Flour
1 Tbsp Salt
1 Tbsp Oil
Mixes for 15 Minutes.
After 15 Minutes Wrap This up and sit for 5 Hours
*Topping:
Mozzarella Cheese
Sausage
Pineapples
Pepper
Ham
Pepperoni
Mushroom
Olive

Quang, you didn't fail us! We're all just learning in this life. In the late 80's, early 90's I worked for Domino's Pizza. Domino's delivers a great, quality pie, but I think you may have them beat! Even though I haven't tasted your recipe, the end product looks so professional

Try using butter oil for the pan to get a golden crust. When shaping the dough, try putting the dough in the pan after you put butter oil on and shape the dough inside the pan. Stretch the outside of the dough and try to shape it to the edge of the pan. Then press the dough to the pan to keep its shape to prevent from shrinking.
I honestly screamed when Quang sliced the pizza cuz all of the toppings got messed uped. lol
Pizza is tough to properly cook without a pizza stone. As someone who doesn't use a stone and uses regular baking pans instead, I ALWAYS end up with raw dough on the center of the pizza IF I put all the toppings on top of raw dough and try to cook the entire thing at once. The only way I've been able to avoid this is by pre-cooking the dough by itself. So, you'd roll out the dough like you normally would and baking it on an oiled baking dish/pan into a pre-heated oven NO TOPPINGS for 12-15 minutes (this is for a 12-inch diameter pizza). Take it out, put on your toppings and bake for another 4-5 minutes (all my meat/seafood toppings are pre-cooked). The pizza turns out well.
Rolling that dough a perfect size to fit the pan was pretty impressive 😂😂

45 min dough ferment? A: that will give you stomach pain B: Dough will taste bland C: harder to work the dough. Let it sit for atleast 1 day, but for best taste 3 day ferment in the fridge. Its a game changer for pizza dough.
Binging with Babish did the same in his calzone episode, a quick fermentation vs fermenting in fridge for a couple days. The one that took longer looked way better

No, pan crust is PAN CRUST!! It needs to cook in the oil to fry.

That pan dough does have to cook inside a pan though. Just like Chicago deep dish, without all the oil.

Fermentation is slowest at 33°F. As the temperature increases, fermentation accelerates up to 100°F, after which it begins to slow until it reaches 140°F and the yeast dies, essentially “killing” the dough. To keep dough from over-rising and failing, minimizing the time it is above 40°F is essential
If Quang would invest in a simple $20 digital temperature probe/thermometer he wouldn't continually undercook his deep dish pizza.
What’s the specific temp he’d be looking for if he did have one?
@@rarejunkie for most bread 190° is ideal, for thicker bread, or deep dish pizza covered in sauce and cheese 200° works well. Since the deep dish dough is also being deliciously fried from the bottom due to the heavily oiled pan I'd probably meet in the middle at 195°... But you'd want to check the bottom of the crust around 190° and move to a higher rack if getting too brown (all temps in fahrenheit. Conversion link for all our Celsius friends).

You should let your oven preheat for at least an hr so the stone actually reaches high temperature. Also you shouldn't put a pan on the stone as that defeats the purpose of the stone. I usually just go reckless and just throw my dough on the stone while it's piping hot in the oven and then throw everything on top real quick. If u use the stone correctly pizzas should take around 5 mins to fully cook and have an amazing crust

U should've put it straight on the pizza stone. It comes out almost like a wood fire oven. Or it think it's called a granite tile stone they have them at Home Depot. Of course let the stone preheat at highest temp until screaming hot before u put it on the stone.

When I make scratch pizza with home made sauce. I make a large amount of dough. Make the pizza while that's cooking I make calzone's with the rest of it and freeze them. They are great if you had to work late. And all your sauce and the stuff you took the time to chop up gets used. I also use about of teaspoon of sugar, oregano, basil, just a little garlic. but that's how I like it.

You have to bake that pizza stone for at least an hour to get it very hot and to keep its heat when you place the pizza on it. That’s how you’ll get a crispy bottom

Age your pizza dough 4-6 days in the fridge it will make it taste amazing also I have found a good thick pizza steel and heat it for 1 to 2 hours before use
