  • Chicken Lababdar: A Rich and Creamy Indian Delight
    Chicken Lababdar Recipe
    Ingredients:
    Marination:
    1 kg chicken
    1 tsp salt
    1 tsp cumin powder
    1 tsp coriander powder
    1 tsp red chili powder
    1 tsp turmeric powder
    1 cup curd
    Gravy:
    3 medium onions
    15 cashews
    2 green chilies
    Chopped ginger
    4 garlic cloves
    3 tomatoes
    Spices:
    2 bay leaves
    1 cinnamon stick
    2 cardamom pods
    Few black peppercorns
    2 green cardamom
    1 mace
    1 tbsp turmeric powder
    1 tbsp red chili powder
    1 tbsp cumin powder
    1 tsp coriander powder
    Instructions:
    Step 1: Marinate Chicken
    1. Combine chicken, salt, cumin powder, coriander powder, red chili powder, and turmeric powder in a large bowl.
    2. Add curd and mix well.
    3. Refrigerate for 1-2 hours.
    Step 2: Prepare Gravy
    1. Heat 1 cup water in a pan.
    2. Add onions, cashews, green chilies, ginger, and garlic.
    3. Boil until onions are soft.
    4. Blend mixture into a smooth paste.
    Step 3: Prepare Tomato Puree
    1. Blend tomatoes into a smooth puree.
    Step 4: Cook Spices
    1. Heat oil in a large pan over medium heat.
    2. Add bay leaves, cinnamon stick, cardamom pods, black peppercorns, and mace.
    3. Sauté for 1-2 minutes until fragrant.
    Step 5: Add Masala and Gravy
    1. Pour in blended gravy paste.
    2. Add turmeric, red chili powder, cumin powder, and coriander powder.
    3. Mix well and cook for 10 minutes.
    Step 6: Add Chicken
    1. Add marinated chicken to the pan.
    2. Add tomato puree.
    3. Mix well and cook for 15 minutes.
    Step 7: Finish Cooking
    1. Cook until oil separates from spices.
    2. Garnish with fresh cream, butter, and coriander leaves.
    Tips:
    Marinate chicken well for best flavor.
    Blend gravy for smoothness.
    Sauté spices properly.
