    Turkey Injection Recipe:
    2 cups of chicken broth or stock
    1 stick of butter
    4 tbs lemon juice
    1 tsp garlic powder
    1/2 tsp white pepper
    1/2 tsp black pepper
    salt to taste

    I think letting it ride for 2 hours before opening the lid definitely helped the skin form that beautiful color. Might be the best looking smoked turkey on RUclips!

    I think those damn flies are over here now Jaxx! Glad you cut the gooch and didn't let the clothes fall completely off LOL! I'll tell you....I've seen about all of the turkey videos that I can handle this fall but I had to watch yours and that turkey was absolutely, hands down the most beautiful one that I've seen!     I use a pizza pan as a deflector. I don’t generally use the pan on chicken or turkeys. I also use cooking spray on the outside. Great looking bird!

    Looks great
    I have a smokey mountain 22
    Im having 20 guest over for thanksgiving
    .I would like to smoke 2 turkeys between 12 to 14 lbs
    Want to serve gravy so I'm going to use a roasting pan inside the smoke mountain
    placing the turkey in the roasting pan on the lower shelf or( is it to close to the heat .?)
    I'm going to put the coals in a snake chain and add coils as needed
    i have a blower system that holds set temps
    bbq guru system works great when I'm smoking one turkey top shelf
    i want to use your method on top rack
    and use the pan on the lower
    any ideas how this would work

      I'm not 100 % as I have never done that before but I certainly think it's possible. Just make. sure to keep a close eye on it and you will more than likely have to rotate them.

    Interesting idea about using a old Smokey plate instead of a water pan. Is your WSM a 18 or 22?

    Well done. Loved the rosemary butter basting. Nice touch. I do recommend you ditch the briquettes and do it with lump charcoal next time. Also, top vent should always be wide open. Happy Thanksgiving! 🍻

    What if I don’t have that pan you used could I just use the The bowl with no water would that still work close to the same or what I need to get something like that

      Hey Chris, using just the water pan would not work because it's not perforated. You would not be able to get the drippings to hit the coals. You could maybe modify a pizza pan if you can find one big enough and put some holes in it. You definitely want to use something to deflect the heat. Maybe someone can chime in on this with some other ideas.

    I am planning on doing this method except adding in an aluminum tray with chicken stock to catch the drippings instead of the water bowl. Any thoughts?

    So no water pan?? I don’t have one of those other pans you replaced it with. Is it ok to just do it with no water pan just empty??

      Yes but you if it's not perforated you wont get the drippings hitting the coals.

      Turned out damn good. It was the best Turkey I've ever smoked. I still prefer a deep fried over smoked but that's just me, two totally different beast you know, not even really a fair comparison.
