    So the insane amount of ingredients in the brine is ONE thing, but the fact that he had all those little bowls and a tray to match just shows you how serious this guy is about his craft.

    The turkey turned out nice with a nice color on it. I miss cooking on my WSM, one achieve great bbq cooks on it. Just one note, after you add flour to the broth, it takes a long time for the flour to fully cook, otherwise it will be difficult to digest. I would either add cornstarch slurry or better yet a roux.

      I like a roux better but this drippings was lacking fat in it, so I went with slurry and it was cooked for a while 💯💯💯it’s just magic of editing. It seems like it was a couple seconds. I was stirring that thing for a few minutes at least thank you for watching. Thank you for the support. Happy Thanksgiving.

    Good stuff. Followed this similarly and turkey came out great. Did the same with the drippings for the gravy and came out a bit more Smokey than expected. May use less of the liquid and mix with the turkey broth made earlier.

    Can you list all the things for the brine.

      The main ingredients are salt and pepper. The herb bundle has thyme,rosemary,sage and some parsley sticks. Now for the rest of the ingredients,is all up to you and your preference. For me I added garlic,ginger,turmeric,mustard seeds,cumin seeds,coriander seeds,green cardamom,blade of mace,fenugreek,black peppercorns,cloves….hope this helps and happy thanksgiving 👍🏽👍🏽👍🏽

    I’ve watched videos where others removed the water pan when smoking their turkey, do you have any specific reason you use the water pan?

      basic brine is just equal part salt and sugar,
      this particular one has a bunch of spices that are optional
      pepper, cumin,fennel,ginger,turmeric,mace,cardamom,cinnamon,mustard seeds, coriander ,fenugreek and a bunch of fresh herbs
