Super Easy Scallops & Asparagus in Ginger Oyster Sauce 姜汁带子炒芦笋 Chinese Seafood Stir Fry Recipe

  • We used frozen scallops to make this super easy and yummy chinese stir fry recipe. You can also use fresh scallops to make this dish, just remove the shells before using. Roland cooked scallops and asparagus previously in another video which can be found here: • How to Cook the Perfec... . The main difference between these two recipes is the addition of ginger juice in this current one. If you are a fan of ginger fragrance, we believe you will like this recipe :0). By the way, please remember to let your scallops thaw fully before cooking. Also pat the scallops dry otherwise you will start a splatter party when you pan fry them.

    Ingredients:
    Serves 4 -pax
    200g of scallops
    5g of young ginger - sliced thinly
    3 cloves of chopped garlic
    1 cup of water
    50g of thinly sliced carrots
    200g of asparagus
    2 tablespoons of oyster sauce
    1/2 teaspoon of sugar
    1 tablespoon of light soy sauce
    2 tablespoons of fresh ginger juice
    Some cornstarch solution
    1 teaspoon of sesame oil

    I love ur cooking recipes. Followed the roast chicken in air fryer and the ding tai Fung golden prawn paste n my boy n hubby love the food. I’m going to try more recipes like the chicken rice as I miss eating my mum’s chicken rice.

    I consider scallops a festive dish as they are pricey. But this recipe is a good balance with other festive dishes because it is simple to execute; whereas most festive dishes are more complex

    I have got to upgrade the scallops I eat! I usually buy the ones on sale. They're tiny, and while they taste good, three bites and I am done. No more! Thanks.:)

      Hi Jason, we also only buy scallops when they're on sale. In Singapore, many brands of scallops will usually go on sale during Chinese New Year period. We've tried Hokkaido scallops and the ones we're using were New Zealand scallops. We found the New Zealand ones to be better because they don't shrink after being cooked. You might wanna try Canadian scallops too although we've never tried them yet. Hope this helps.

    Hi Roland, made this for family recently and it was fantastic. I was a little worried about so much ginger juice but it really made the dish. It really is easy but you do need your mise-en-place because the prep moves VERY quickly. Ask a sous chef (family member) to help with the chopping :)

    My favorite foods combined, love asparagus and scallops. Thank you Chef. One question though, if I have prawns on hand do I increase sauce or reduce scallops? Love prawns with scallops. Would you consider doing a full meal, multi course video. I'd love to see how you pair dishes. Love you both.

      thank you so much home two days now another 3 vweeks on steroids and other medicine I was on liquids only for 3 weeks so once stomach and bowel better will be cooking and eating your delicious recipes also keen on becoming patrion ……. cheers / alan

      oh dear, 3 weeks only on liquid. That's really long. My nephew is diagnosed with crohn's disease a few years ago. He is still struggling with the condition but he's getting better. Your condition reminds me of what my nephew went through.

      Hi Pei Xuan. You just need a grater which looks like this (en.m.wikipedia.org/wiki/Grater - with smaller holes for ginger) and then squeeze the juice out. Hope this helps. Happy cooking!

    Hi Roland, every time i try to pan fry scallops, I get lotsa water coming out of the scallops even after I dried them with kitchen towel (after thawing). What steps did I miss out after I thaw the scallops?

    My experience with pan fry scallops is the scallops shrink quite a fair bit. Do you have such encounter and how to overcome ?

      Hi Kimmerie. We also have this problem until we started using scallops from a particular Canadian brand. There’s nothing you can do except to find a more reliable brand of scallops. Maybe you can try Canadian scallops. Hope this helps. Happy cooking!

    Where to get good and practical priced scallops in pj/kl?

      Hi Kunisha, unfortunately we don't know because we stay in Singapore. Usually we wait for special promotion (usually during Chinese new year period). We've tried Hokkaido scallops and the ones we're using were New Zealand scallops. We found the New Zealand ones to be better because they don't shrink after being cooked. Hope this helps.
