    Brother you know you're old school and country when you used that plate as a cover. That's how my mom and big sister used to cover a skillet when we didn't have a skillet cover.

    I fry 2-4 slices of bacon first, cooking the onions and squash in the leftover grease. When that is done I crumble the bacon and add it on top of the vegetables before serving. Adds great flavor and texture to the dish.

      Thanks Ken, the way you described your squash dish is exactly how I remember my mom making her squash dish in her cast iron skillet. I haven't made it myself in several years for fear it wouldn't taste the same.

      @@pauletteliggett8117 you have to take the time to try. It took me many attempts to get my mother's chicken and dumplings, tuna egg salad, and banana pudding correct, but it's worth it if not just for the tasty memories! Still working on the sweet potato pie though. Pretty sure she snuck something in that I'm missing xD

    That is how my mom always prepared her squash. I love it along side delicious baked chicken, Jiffy cornbread and ice tea! Mmmm! I am getting hungry!

    I use either butter or bacon grease, depending on my taste that day, and cook exactly as is done here; with one exception. After letting the squash and onions cook for 15 or 20 minutes covered, I remove the cover, turn the heat up to about medium high and cook off most of the liquid and let the squash brown. Then crumble up the bacon and mix with the browned squash and onions. Delicious!

      One needn’t be southern to cook with bacon grease or use a bowl/plate to cover a pan.

    Being here in New Mexico, we make this and I throw in fresh roasted green chili and roasted corn. You talk about tasty!! I think you would like it. :)

    Nice timing, Boy! I just brought home some extra nice yellow squash and zucchini today. This recipe is a simple classic from the past that had actually slipped out of my memory, so thankee for snapping it back in. It shall be part of dindin tomorrow, for sure!

    I like to do half zucchini, half yellow squash.....for the color. This is a great Old Timey recipe that never gets "old"......Thumbs Up!!!

      I like it mixed with zucchini sometimes too Judith! But the way I really like zucchini is cooked with tomatoes and onions, then topped with a little Parmesan cheese! Thanks for watching!

    I've been large dicing these, frying them in olive oil with Italian seasonings, salt, pepper, garlic, and onion power over low-medium heat. Pour in spaghetti and simmer until sauce thickens 45-60 minutes. Serve over spaghetti and Parmesan cheese for a veggie spaghetti. So, so good!

    Matter of Fact, we Had Some Fine Summer Squash and Zucchini tonight. Summer squash from my first ever, Garden. Long Story Short i did it for family, in and out of Hospital's and Rehabilitation in a nursing home. I knew how Much She's had a Garden All her Life. That was her True Love, Her Garden. So i planted it all for her. Keep it weed free. Didn t kniw how much is involved in gardening. Despite my Own pain, getting more as i do work. Its worth every minute for her at 90 , 91yrs old Soon.

    Yes NO SUGAR. This is how I make my yellow squash delicious 😋. You can also add some onion and garlic powder. Thanks for sharing.

    You said a mouth full, when u said use a Vidalia onion. I'm from Vidalia Ga and our little town is famously known for our sweet onions. They also make the best onion rings and liver and onions meal.😊😊🥰

    Cook up some bacon, crumble, set aside them aside then make this in the drippings. Crumble bacon on top when squash is done!! YUM! So making this!

    I stir fry onions, sweet peppers, garlic, salt and pepper in bacon grease. Ass my squash in ..sometime I add mushrooms but I bake it in the oven❤❤

    Vidalia Onions are named for a town in South Georgia where the soil is perfect for their growth. It’s tempting to call them Vi-DAL- ia Onions, but the town’s name is actually Vi-DAY-ia, Georgia, hence, Vi-DAY- ia Onions.

    Looks delicious. Another alternative is using a bunch of green onions with bacon drippings and fresh cracked pepper. Not healthy but yummy 😁

    I also cook them like you do, but add Worcestershire and dash of soy sauce. I also cook squash uncovered to concentrate the sugars and favors.

    i make a similar recipe, using both green and yellow squash along with spanish onions and little red onions for color. i saute the onions in a little spray oils, when they get translucent add the squash with some salt and pepper for taste or even throw in crushed garlic with the onions...

    I made this yesterday from yellow squash and zucchini's from my garden. I like to use my old cast iron pan with a dash of flour and some bacon bits.

    Exactly how we do it in restaurant as a side, we mix breadcrumbs with lemon zest and thyme as a topping and spread in dish, add havarti cheese and top with the breadcrumbs, sell as a casserole for a special, side with a dish, casserole as a special $14.99 lol 🤷

    An 80yr old lady stopped me in Walmart and told me about adding Goyo pork seasoning instead of salt to the onions and squash. It is unbelievable. You need to try it. You only add one packet to the frying pan.

      Yea, any seasoning you like, can make any ethnicity. It's really a base for anything, white pepper works and looks better if have it. Go crazy with it, make a casserole fast lol.

      The water was from the squash...
      Butter is made from CREAM... no added water.
      I used to make it on the ranch all the time.
