    RAILWAY WALI ALOO KI SABJI
    Preparation time: 5 minutes + boiling time
    Cooking time: 20 minutes
    Serves: 4
    Ingredients:
    3 tbsps oil
    1 tbsp cumin seeds
    3 green chillies, finely chopped
    1½ tbsp red chilli powder
    ½ tbsp turmeric powder
    ½ tbsp coriander powder
    Salt to taste
    5 tomatoes, finely chopped
    2 medium potatoes, boiled & roughly cut
    Coriander leaves, finely chopped
    Process:
    • Heat oil in a kadhai, add cumin seeds and let them splutter. Add green chillies and cook for a minute.
    • Add red chilli powder, turmeric powder and coriander powder, mix well.
    • Add tomatoes, mix well. Cook until softens or leaves oil. Add salt and mix well.
    • Add boiled potatoes, cook for 3-4 minutes. Keep stirring to avoid the potatoes from sticking.
    • Add water as required to make gravy. Cook for another 5 minutes.
    • Garnish with chopped coriander leaves. Serve hot with puri.

    Chef just made this recipe. And first time in my life I cooked curry without onion n garlic ginger. I was so temped though. But I still put some rayi n methe seed in oil before esfotida , and put cup of cherry tomatoes when the potatoes were simmering away in gravy, i must say best ever aloo sabji I have had. And also I cooked it midnight 10 pm Australian time. Loved and it’s added to my regular dishes now. Thank you.

    I come from a railway family and still remember aloo ki sabzi and poori, and traveling with dad on his LML Vespa late in the nights to get it. Beautiful tour around the memory lane Ranveer.       People here in the US are going to wonder why that's the only thing I know how to say in Hindi.
      My first thought: "Imagine being lucky enough to be Ranveer and be able to whip up something like this if you get hungry in the middle of the night".
      My second thought: "How can he eat this in the middle of the night and stay so slim?"

    Though I stay in Amritsar but quintessentially a calcuttan....a bong. I am a just a school headmaster, but always wanted to be a chef.....even now.
    Anyways, I do invite you to Calcutta to enjoy the bong food with it's underlying philosophy.
