birria tacos are my go to in my small town. The "Mexican" restaurant has Colombian food, Mexican Food and El Salvadorian food. Small menu and delicious food. Salsa Verde is a MUST for all of the foods. Green sauce can be spicy, mild, tart, sour, fresh and peppery, it just depends what you use for your salsa verde (green sauce). The consomme is your dipping sauce for the birria tacos.
When you take a bite of food for the first time and your reaction is “what The hell man”. It’s when all the flavors come together in a way that you never imagined and you are totally floored with how something can taste that good. It’s a rare occurrence.
I’m form Michoacan Mexico where caritas originated, here we eat them on a a corn tortilla with pickled chilies and carrots, the vinegar cuts the grease that comes from the carnitas. it’s delicious. You can also have cueritos on them which is the pork skin, it’s soft not crispy but it’s delicious.
