食材:
豬五花肉
小蘇打粉 一小匙
糖 一茶匙
玉米粉 一大匙
水 適量
(黑豆鼓醬)
黑豆鼓 一大匙
蒜頭 一顆
洋蔥 半顆
米酒 一大匙
鹽 一茶匙
糖 一茶匙
胡椒 適量
1. 將五花肉切小塊後裝在碗裡,加入小蘇打,糖,玉米粉以及水拌勻後,放入冰箱冷藏一小時(軟化肉質以及將豬肉內多餘的血水排出)
2. 黑豆鼓洗淨,蒜頭及洋蔥切碎備用,將上述材料用熱油爆香後加入米酒拌炒備用
3. 瀝乾豬肉的水分,將豬肉洗淨後加入鹽,糖,胡椒及新鮮蒜末,最後加上兩匙做好的黑豆鼓醬拌勻
4. 大火蒸15-20分鐘後,撒上蔥花即可

Ingredients:
• Pork belly
• 1 teaspoon baking soda
• 1 teaspoon sugar
• 1 tablespoon cornstarch
• Water (as needed)
(Fermented Black Bean Sauce)
• 1 tablespoon fermented black beans
• 1 clove garlic
• 1/2 onion
• 1 tablespoon rice wine
• 1 teaspoon salt
• 1 teaspoon sugar
• Pepper (to taste)
Instructions:
1. Cut the pork belly into small pieces and place in a bowl. Add the baking soda, sugar, cornstarch, and water, and mix well. Refrigerate for 1 hour (this helps soften the meat and remove excess blood from the pork).
2. Rinse the fermented black beans, chop the garlic and onion, and sauté in hot oil until fragrant. Add rice wine and stir-fry, then set aside.
3. Drain the pork and rinse it clean. Add salt, sugar, pepper, and fresh minced garlic. Finally, add two teaspoons of the prepared fermented black bean sauce and mix well.
4. Steam on high for 15-20 minutes, then sprinkle with chopped green onions and serve.
