Addendum about Moom's dropplet of Qvrsd knowledge: With a precise cut in the chicken's neck you can leave a bit of the brain stem still attached intho the chicken's body (the stem controls the most basic bodily funcions like feeding, heart and organ functioning and waste disposal) making the chicken live indeed without the head. And the most famous "headless" chicken was named Mike, lived through Apr 20 of 1945 and died on Mar 17 of 1947, living as any chicken (had to be force fed and hydrated through a syringe) and died when a seed chunk got stuck into its esophagi killing the animal by asphixiation.

So a farmer wanted to eat his chicken, but he realised he cut it's head way too high. Basically, there was still some part of the chicken brain in the body. The farmer wanted to keep it alive, so he fed him directly with some sort of water-base food. 18 months later, the farmer forgot this chicken outside. It died due to hypothermia during the night.
Which chicken are you talking about? Because Mike's cause of death is mechanical asphyxiation. I actually mentioned this in chat during that stream, including the fact that his brainstem was undamaged, so he wasn't completely headless.

However, strangely enough, it's cause of death seems to vary from source to source. French Wikipedia for example says that it's owner forget to drain the mucus that accumulated in the throat. English says he had a kernel of corn stuck in his throat, or that he simply asphyxiate due to not being able to breathe properly. I wouldn't be surprised that some sources said it died due to hypothermia.
Iirc, the one chicken that lived for months afterward only survived because a portion of its brain wasn’t removed due to a botched beheading. They fed it by dripping liquids into its exposed esophagus, and showed it off as a curiosity.

Once, for a party, an aunt of mine who lives in the countryside, cut off the heads of several chickens and set them loose so my cousins and I would play with them by trying to catch them. The reason he survived was that enough of his brain stem remained that he was able to keep breathing and whatnot after having his head cut off. Because the brain stem handles a lot of the boring stuff that the rest of the brain is too busy for. I don’t know what sort of condition he 'lived' in, but he was still breathing, at the very least, and actually became a pretty popular tourist attraction. He was fed with one of those eye dropper things, just basically dropping nutritional stuff down his throat. I think there was a specific reason that he died, because I don’t think he died of old age, but I cannot actually remember.

The chicken they mentioned was apparently a real thing, the reason it survived so long was because part of the brain still remained since the cut was slightly above the norm, and the chicken was hand feed with a dropper.

I'm no expert, but I think the majority of a chicken's nervous functions are in its spine below the head, so it will still have motor functions after decapitation. Not sure how that one chicken lived 18 months, but he ate by being fed through his neck. He died because he choked one day, not because of his lack of a head.
