- This was just a first run at the idea of frying whole simmered garlic cloves along with the potatoes for hash, using the starch from the potatoes to get them nice and crispy and sweetly caramelized.

You inspired me to try something. I did this but also added in sliced up onions into the strainer I drained the potatoes and garlic in. I didn't really know what boiling the onions would do and worried it would kill their flavor entirely. But the starch from the potato had the same effect on the onions as the garlic. So cool way to get basically breaded fried onions in there as well.
This feels like a 'not all heroes wear capes' moment.
This feels like something Chef John would have come up with (and I mean it in the best possible way). Such a simple idea that turns out to be an excellent one for a variety of reasons and for virtually no extra effort compared to the original plan of attack
Made this over the weekend and it turned out SO GOOD. Best fried potatoes I’ve ever made. I threw a sprig of rosemary in the pan halfway through frying as well and they turned out perfect.
HREAM: hash rules everything around me. Gotta love this breakfast dish 🤤

Funny I did almost this exact same thing with the potatos I put under the rack for roasted chicken last night and i was pleasantly surprised at how good the crispy garlic was, i just wanted some garlic flavor in the fat. I am definitely going to try boiling them with the potatoes next time. Been workshopping a sort if mostly hands off meal for weeknights and this will be a nice addition to that.

Hash has been hands down my most made meal from the Food Lab, I always go out of my way to buy all the ingredients if I only have say eggs or jalepenos and need to use them asap. Now I'm gonna be looking at a whole bulb of garlic and think "I could get stuff for hash." Excited to try it!

Since I make fried potatoes, most mornings always with chopped garlic, I will try your experimental method. I tend to go a little garlic crazy sometimes and this will give me another chance to add bigger garlic pieces that are coated with potato starch that in turn, keep them crispy 👍.

Growing up, my mom would make fries and toss some garlic in there with skin and all, then I would fight my dad for those precious garlic 🥰

The Fly Trap in Ferndale MI does this with their hash! The cloves aren't quite as crispy, but they're unbelievably good. I really need to get back there, your crispy ones look amazing!

Their hawaiian smoked BBQ is a treat itself, but their garlic fries in particular deliver a lot of this sweet fried garlic and they are not shy with it.

A trick that's been floating around the past few years is to add baking soda to the potato water to help get the potato surface extra starchy. How do you think this would play here? Would there be any consequences for the garlic?
Actually, a quick Google even shows you wrote a serious eats article on this technique. You may well be one of the main catalysts for it's popularity.
Yes, that’s my technique! I would do it for potatoes I’m roasting. Frying I don’t like it because the slurry gets too soft and can mess up the oil.

I like this idea, but I'm curious, does the garlic flavor that water at all? I know its heavily salted, but I wonder if you use less salt then carry that water over to make a vegetable broth if its noticable at all.

What temp do you fry them? I.e., medium high, high, etc
garlic burns at medium. Maybe boiling it adds some protection but the garlic will definitely be the first thing to go over temp.

My understanding is that garlic will turn bitter if cooked at a too high temperature. Did you notice any bitterness?
Burnt garlic does. He didnt burn it, just caramelized

Ive made this and those garlic cloves are delicious! Ive made it accidentally with potato’s and with steaks as well.
As someone who has made tempura and pakoda fried garlic this is right up my alley. Im no closer to my ideal garlic dessert experiment, but every bit of garlic knowledge helps.

i would guess that normally they would be but with the way he's doing it, the potatoes are basically cooked through from the boiling and same w/ the garlic. the garlic gets coated in a layer of basically mashed potato which gets fried. since the hash is already cooked soft and its only being fried to crisp it up it isn't staying under temp for long and the inside of the garlic isnt gonna burn

Random but... I was just casually wonderin to myself what addin vinegar to some baked potatoes wud do and got curious and looked up what vinegar does to potatoes...
And the article i found cited your serious eats recipe on crispy thin french fries as to where they learned to use vinegar to make them crispier
No clue if itll work the same in this tho. I made three of them just now, one control and vented (cut a single C into the foil), two with vinegar, one vented one not (cut two V's into the sides of vented vinegar)
Ill report back if i notice any diff btwn the ones i added apple cider vinegar too; theyre all ssnd the same: paprika, chili ppr, black ppr, lemon ppr, garlic ppr, and soul food ssnin
Oh and i stabbed the potatoes quite a bit before puttin them into the oil or oil/vinegar mix (with ssning in all ofc), that way it may even soak in a bit and rly crisp up more of the potato
im surprised any of the garlic flavor gets in the potatoes through the boiling that is a first time seeing that for me

Boil a whole clove until it's soft, try it, and please tell me I'm not completely insane.
I pan fry whole cloves when I need just a few for mashing or for a recipe. A lot quicker than “roasting” them.
No need to boil them… just fry in oil until browned and it’ll mash/eat exactly like roasted garlic.

Ever since buying pre peeled garlic my favorite thing to do is add whole garlic to things. I have tried this before but personally didn’t like boiling it first. They go sweet and mild just in the pan directly with the potatoes of if you have a tendency to overcrowd frying them first and getting garlic oil out of it certainly doesn’t hurt. But boiling them first I find is just too mild of a garlic flavor (but I might have just built up a tolerance from the sheer volume of garlic I eat)
