I've definitely eyed the cider kits at the brew shop and thought about doing the same here to make Cysers I don't want to chase fruit/juices down on. Nice job! Have you ever tried spreading 24 hours between Chitosan and Kieselsol additions? I find that it works much better that way.
I actually did a mead with one of those kits! I got the peach apricot one and just put some costco honey in it and I actually barrel aged it for about 3 weeks. I got a 5 gallon ex bourbon barrel for my birthday and wanted to put something in it and so I decided to make this for it. It surprisingly did pretty well with the barrel. I have it aging in carboys now

Can't wait to try my hand at this one. I use a ton of Lalvin K1-V1116 in my brews, so have plenty on hand.
So is it technically a melomel payment? It sounds interesting.
