Hi StrOut, Typically we only use the Atoma diamond stones for stone flattening and leveling at the shop and rarely use them for sharpening the actual knife. Most diamond sharpening stones can be rather aggressive and I may look into getting ceramic whetstones instead. These should give you better result and not dig as deep of scratches that diamond stone are notorious for.
How long do these Atoma plates last? And how do you break them in?

What is best for course stones? Wet/Dry paper on flat granite?
