For anyone trying to decide which pan size to use (the video states three 8" and the website says three 9"), I made it with two 9" pans and baked at 350F for 36 minutes.The cakes had great texture and were very light. I also made 75% of the frosting recipe and still had about a cup leftover.
Very weird, I ALWAYS have to add more of the ingredients so I'll have actually enough frosting, sometimes I have to even double them, never enough if I were to listen to the recipe. How can someone have _too much_ frosting by following the recipe is WAY beyond me and I do not want to understand such logic either. Such sad cakes.

Italian cream cake is a staple in any Texas holiday, and I am usually the one that makes it for my family. I've never used almond extract, but I may have to give that a try. Your cake looks delicious!
@@lidyaabbott8229 If you know how to use it properly, it can be a wonderful flavor to use. You don't necessarily taste the almond, but it helps to bring out other flavors. But, it CAN be a disaster when not used correctly.

[Just in case any bakers panic if they've used scales to check the distribution of weight between the three cake pans]. The total weight of the cake batter is just about 1.4kg all up, so each pan should just about hit the 460g mark.
Thank you for this. I managed to scrape out 500 g each pan. I made this recipe twice today and each time I had the same weight, about 1500 grams total making each pan with 500 g each. As for the cream cheese, the total weight is 446 g… one stick is the 226 he’s mentioning

I’m trying to eat healthier and cut my sugar intake. So I used stevia for the frosting instead of powdered sugar, and it’s just as delicious. I just made it and it’s absolutely delicious. I’m going to make it again for my birthday. Thanks, John! 😋
Hi John, I was born and raised in Branford Connecticut and while I lived there, there was a bakery called Castellons run by Tony Castellon ( pure Italian guy) and his Italian cream cake was to die for. It was totally different from any other italian cream cake. It had 4 layers, and each layer had a different filling ( pineapple , strawberry, chocolate bavarian, and vanilla bavarian). It is topped with italian cream made with mascarpone and heavy cream. 😋. The best mascarpone frosting ever!!

This looks so delicious. I love your channel and recipes. I worked at an Italian bakery briefly when I was in my late teens. (That'sv where I learned how to use a pastry bag and flower nail, etc. I made gallons of canolli filling at least three times a week, and the hardest part of that job was resisting taking a spoon and eating it, especially since we had to judge the amount of cinnamon oil and take a tiny taste to make sure it was ok. ) Italian cream cake was one of their specialties, but I never knew the history of it. This is an excellent recipe, but to my knowledge it's not really an Italian cream cake, which traditionally has ricotta, fruit and custard, and often whipped cream in the frosting or a whipped frosting, although it looks absolutely delicious. I made one, deviating somewhat from their recipe,(different filling) for my eldest daughter's dedication when she was a baby. This one is reminiscent of a Southern coconut or Hummingbird cake, sounds so good, and I'd love to make this for the spring holiday. 🥰

I need to try this soon. Looks amazing! Hint from my late Mother (and Grandmother) whenever you use bagged pecans in a recipe, but sure to eat a pecan from the bag first. Sometimes you'll get a bag with rancid pecans and the whole recipe is ruined.

Sorry to butt into your thread, but you HAVE to get the cake bands! I was shocked at the difference they made...my layer cakes are so much taller without the trimmed parts gone & the edges have a nicer, soft texture. Good luck!

Grew up & live in a city w/large Italian population, including several Italian bakeries. Never heard of this cake.Around here an "Italian Cake," is Rum cake. Moist vanilla cake soaked with rum syrup, layered with chocolate/vanilla rum custard, frosted with whipped cream.
I loved how thoroughly you explained each step, and in things between the steps like putting some frosting on the cake board to help hold the cake in place. little things like that are awesome.

John, there is a cake called a friendship cake, or Herman cake. You're probably familiar with it: a fermented fruit mix is the basis, and you share that fermented fruit with a friend so they can make their own friendship cake.

I think it made 7 cups of batter.... I used 3 pans and did 2 1/3 cup batter per pan and it came out about the size of his.

He did say it's not a traditional Italian cake, as it originated in Texas in the 30s. Created by an Italian baker, even though it's not Italian style.

I need to try this soon. Looks amazing! Hint from my late Mother (and Grandmother) whenever you use bagged pecans in a recipe, but sure to eat a pecan from the bag first. Sometimes you'll get a bag with rancid pecans and the whole recipe is ruined.

That looks a-MA-zing! Seriously, you've got me convinced that I need to get some cake bands so my layers are even. I was amazed at how even the three layers were and how you didn't have to trim them.
Sorry to butt into your thread, but you HAVE to get the cake bands! I was shocked at the difference they made...my layer cakes are so much taller without the trimmed parts gone & the edges have a nicer, soft texture. Good luck!

Grew up & live in a city w/large Italian population, including several Italian bakeries. Never heard of this cake.Around here an "Italian Cake," is Rum cake. Moist vanilla cake soaked with rum syrup, layered with chocolate/vanilla rum custard, frosted with whipped cream.

John, there is a cake called a friendship cake, or Herman cake. You're probably familiar with it: a fermented fruit mix is the basis, and you share that fermented fruit with a friend so they can make their own friendship cake.
