I love how Sephiroth was actually smart in Advent Children and didn’t just stand there and block or take the hit, rather he took advantage of the situation and stabbed Cloud.
My thought was that at that point, due to his previous impalement, he was heavily weakened and felt he would be in danger without his sword, so he tried to hold onto it and regain control of the situation until it was too late.
tbh, i still say the og version of that scene holds up better. sephiroth is in shock as he gets lifted up by a nobody grunt and it happens in 5 seconds too. final order and the crisis version are stupid

One thing I love about game logic. Someone can be stabbed straight through the chest, where there are lots of vital organs, and the blade will come out the other side of their body, yet it won't be enough to instantly kill them.
I was reading some things about Sephiroth's development and it said that the developers of his design in ADC wanted to see Sephiroth with a sense of "alure and charm" and a face you will "never see in real life". I think that made this the core standard for Sephiroth design ever since... They improved his face in the Remake and Sephiroth does looks like someone so different from the main world and story of FF VII. He have some presence of an Angel and a Demon at the same time... he's avery intimidating character.

Sadly the Blu-Ray of Advent Children Complete doesn't include it. It's not considered canon though as some of the scenes within the OVA contradict both FFVII and Crisis Core, but it's a fun watch. RUclips probably has it somewhere to watch.

Cloud is a genetically enhanced Super Soldier with Alien Cells inside him which increases his vitality, strength and durability among other things. It's perfectly logical why Aerith dies to one stab and Cloud survives several stabs.

In the og ff7 it looks like a stab to the gut more than the chest, which is a lot more survivable. But then again the sword moves a lot due to how the models are animated, it looks like it goes in his pelvis at one point.
