Looooove broccoli cheddar soup! I'll have to try it with more garlic like you did. FYI for anyone, I don't always have coconut milk on hand, so I usually use a mixture of equal parts soy milk (plain unsweetened from Trader Joe's) and plain unsweetened almond milk. As always, an excellent video, Erin! 😃
Made this two weeks ago. It lasted one day. I let one of My non vegan girlfriends try it. She can really cook. She was talking about how good it was. Better than Subway. My 12 yr old grandson loved it too. About to make again tomorrow.

That Miyoko's oat milk cheddar cheese is my favorite vegan cheese! I have a cashew allergy so my vegan cheese options are already limited. I use this one all the time in my baked Mac and cheese and queso dips. It is so worth the price (for a vegan cheese, that is).
I just messed up this entire recipe and had to throw it all down the sink 😡 can I skip the step with putting onion and butter in the very beginning ? Where would I just hop straight into, which ingredient ?
You have great recipes and great personality ...but be mindful of the amount of processed vegan food being consumed. Because I know vegan is a trend, but consuming so much processed food doesnt make it healty just becaused its labled vegan

I've never liked cheese. Even before becoming vegan. If I wanted to make a broccoli chowder, would I do the same thing without the cheese.
