Using Avocado on Top of Sushi: How to Make a Caterpillar Roll

  • Using avocado on top of sushi is definitely a show stopper, but sometimes it's hard to do correctly. In this video I'll show you how to slice and top a sushi roll with avocado AND how to plate the roll to make it look like a caterpillar.
    The Caterpillar Roll is normally made with unagi and cucumber on the inside, but seeing as how unagi is extremely unsustainable I will be substituting it with tempura shrimp!

    I love this!! Such a cute roll and nice, clear, tutorial! I like the aesthetic of the curvy black line of eel sauce but I wonder if there's an alternative sauce that is less fishy? (Sad, I know. I should have no business with sushi if I don't like fish. Please bare with me for asking!)

    Great Video! Easy to follow for the average viewer. How much in advance can I make this roll and how to I prevent the avocado from browning? I though of rubbing lime juice but it may affect the taste. Thanks.

      Thank you! I would say this roll could be made 1-2 hours before consuming, but no longer than that. The sooner its consumed after making it, the better. When peel your avocados, do it by hand. There's a thin membrane that helps prevent avocados from browning in between the skin and the meat. If you use a spoon and scoop out the avocado, you will crush the membrane and lose it's benefits. Hand peeling is the best way to prevent the avocado from browning without adding anything else to it. You could use lemon juice (or lime), but like you said it would alter the flavor a bit.

    My favorite roll! OMG I can't express how much I love this roll.. Thank you so much for making this!!
    One question though: I'm so sad to hear how fresh water eel is now on the endangered list but even though shrimp
    can be farmed sustainably, I keep hearing how the shrimp farms are primarily a cesspool of sewage and chemicals.
    Can you offer any advice about how to know the shrimp you are buying isn't raised in such a way?

      Thank you! That's a great point to bring up. Knowing that seafood is farmed is not enough to say that it's safe to eat. Shrimp farms are notoriously bad about their low regulations on pesticides. For peace of mind, I always use the Seafood Watch App to verify that what I am about to buy is sustainable and safe to eat.       Ethan Tenorio Dude, I know. I didn't realize how dull that knife was until I started recording the video. It's not my best usuba, but I left my whole knife roll at the restaurant the night I was recording this. Doh!

      It's probably not. There is no standard naming convention for sushi roll recipes, so it's not uncommon for names to get mixed up

    Hey chef, can you tell me how to prevent the avocados from turning brown? Mines get brown so fast it's not appealing 😢

      Peel them by hand! The membrane between the skin and the "meat" of the avocado will stay intact when you hand-peel your avocados. You should also keep your sliced avocado in a sealed container as much as possible.
      Some people will add salt or citrus juice to the avocado to slow down the browning, which is fine, but it will also slightly alter the flavor.

      Yes, and by telling other people not to eat eel I can help raise awareness on the issue. I know that they farm eels in Japan, but they are catching them in the wild and raising them in captivity - they don't breed eels in captivity. That means that those eels will never get the chance to breed in the wild!
