      Jollof rice is lovely when cooked by Africans, its like rice and peas, nobody does it better than a jamaican. Nobody does jollof better than the Africans.

    Tried this recipe but I put the thyme and seasoning after I poured the red sauce and I added 2 chicken knore cubes and 1 beef knorr stock cube, tasted absolutely delicious.

      +cosette love The only thing I think can cause the taste could be the type of pepper used or too much onions in the sauce. Here is a link on how to blend the sauce.

      +Rii Elizabeth Depending on how you organise your cooking and the type of cooker you are using, I would say roughly 45mins - 1hrs cooking time from start to finish. Thanks :)

    Damn! I have to cook this. In Portugal we eat a lot of tomato rice which is somehow similar without the curry and the chicken/beef stock. When I was in Japan I learned to do japanese omrice which is one of my favourite and I am 100% positive that this jollof rice will be a great filling for omrice.

      Hi Sabine, thank you for trying out the recipe. No you did not make a mistake, it is optional to add crayfish. You can always customise it to your own taste. If your husband likes crayfish you can include it when next you are cooking Jollof rice, add some ground crayfish or prawns when adding the other seasoning. Hope this help. Thanks.

      Hi, let your pepper sauce cook on medium heat until it is cooked, then add the rice and reduce to low heat until the rice is tender. Hope this helps. Thanks.

    The last "taste the rice to see if it's done" after you have mixed it evenly? What if it is not yet done and it's mixed already? I recommend tasting the rice to see if it's done before mixing.

      Hi, either way is fine. If the Jollof rice is not tender as preferred after mixing, it can be left to steam cook on very low heat until the preferred texture is achieved. Either method would not affect the outcome of the Jollof rice. Thank you for your suggestion :)

      +Rii Elizabeth Hi, just to clarify. Were you asking about the liquid stock or knorr stock cube? If you were asking about the liquid stock here is the link on how to make it at home ruclips.net/video/AIJ2e0HM5d4/видео.html however it can be made out of beef only or chicken only or the combination of the two. About the stock cube I used knorr stock cube, however you can use any stock cube of your choice. Hope this helps :)

I have tried cooking with and without both the bay leaf and the assorted chicken and beef stock, personally I prefer to include both ingredients because it gives the Jollof rice a special flavour and taste. However you can try to customise it to your taste to see what works well for you. Thanks:)

      +Elyas247 I'm Caribbean and one the most confusing things for me was why the Nigerian recipe was par boil then the sauce added. Just seems a little more hard work. I normally rinse the starch out at the beginning of the process and it has the same result

      Hi, I believe the reason why some people parboil their rice is because it gets rid of more excess starch compared to when rinsed before cooking. However in my opinion I get the same result with either method.

      Jill Bowden The reason for using foil paper is to retain all the heat in the pot which quickens the cooking process. You can use parchment/baking paper instead. Thanks for watching.

      Hi Oyinade, the type of pot I used in the video is an aluminium pot. I can't remember the store I purchased it from because it was a while ago. However you do not need to use the exact pot you can also use a stainless steel pot. Thanks :)

      Hi, the foil is not a must, it just helps to retain the heat in the pot so the jollof rice gets ready faster. Thanks.

      Hi, no I did not cook the rice separately. I rinsed the rice several times to get rid of excess starch then poured it into the sauce. Please watch the video starting from 2.52 secs for better understanding. Thanks.
