Good info on the brisket fat content. I typically trim the brisket to get practice on trimming before cubing up for burgers. Gonna have to try that Bacon Bleu seasoning.

Those burgers have to taste great because you cooked them with wood. Wood beats charcoal any day. Plus, you used the world's best mayonnaise.
How do they make butter powder? Anyone answer?
Here is the process "Place the butter pieces on a parchment-lined dehydrator tray, making sure to leave space between each piece for air circulation. Set the dehydrator to a low temperature, around 125°F to 130°F, and allow the butter to dehydrate for 8 to 12 hours." After that you grind it up. There ya go. =)
