Dorico is able to write in OPEN meter, so you can write your cadenzas incredibly easy (and you can make the meter change only for one staff, etc...). Also there are possibilities to write a cadenza as a huge hidden TUPLET so all the notes of the cadenza are in one bar, and the rests on other silent instruments are respected. may possibilities: Dorico is very powerful , easy, consistent and very elegant in its workflow!

You can read more here: www.scoringnotes.com/tutorials/creating-freely-metered-music-dorico/ You can also create a larger measure, add the appropriate notes within the cadenza, and hide the time signature. (If you want to have a chord being played under the cadenza, you may have to work a little bit in the engraving in order to center the notes and appropriate fermatas!)
