As an American living in Italy, I have learned one secret to great Carbonara is using the fat rendered from the guanciale as the oil. Be careful not to add the egg yolks when it is too hot or you wind up with scrambled eggs. Also, Italians are VERY particular about using the right pasta. No spaghetti for carbonara!!!!!! Carbonara is made with fettuccine and nothing else. We are every bit as critical about fettuccine carbonara as you are about egg fried rice.

I am 100% sure that Nigel has been watching the Vincenzo's Plate RUclips channel, just from the "Carbonara" and "Guanciale" comments alone. 🤣 I think he should amass a collection of "uncles" from loads of different countries to build an epic sketch on how Britain's chefs are ruining all food. Like an AA style meeting with various chefs and middle-aged authentic home cooks having a steady breakdown due to reviewing BBC goodfood videos. Then at the end when they're huddled in a mass of despair, cut to a British chef holding a toaster like a baby, eating a Yorkshire pudding and a wall of signed contracts with Tesco/BBC to promote British bacon, chilli jam, and blue dragon sauces. Oh, and surround him with bags for life filled with 2-minute microwave packets.
