Hi Gemma! :) Very nice recipe! Coming from the land of dulce de leche I’m most surprised nobody has come up with a recipe like this before. Very creative! :D In Argentina empanadas are considered one of our specialities.Although, I know that they are eaten in other Latin American countries as well. Here we use a kind of puff pastry to make them, but I’m sure that a shortcrust pastry must be better for this sweet treat. We call that curled rib to seal the empanadas “repulgue.” For some reason, many people here find it a bit difficult to make that but you mastered it. Well done! Overstuffing pastries? That is so me! Hahaha. I always overstuff my cream puffs and eclairs so when I bite into them, pastry cream bursts into my mouth and chin like a volcano. I just realized I haven't yet made pies or empanadas before. I guess I have to rectify that and this would be my first go! Love the pizza oven!!

Kynth0s Isn't dulce de leche caramelized milk? It's not the same as "caramel" which is caramelized cane sugar, but they are made with a similar process, just from different sources.
Chaosdude7111 Actually, no. They are made from extremely different processes. A caramel you actually caramelize the sugar and add cream. To make a true and traditional dulce de leche, you mix milk and sugar and let it slowly cook for about 2 hours, stirring constantly and skimming the foam. The boiled sweetened condensed milk, is a shortcut and even though its amazing, it doesn't really tastes as good as the slow made one.

And dulce de leche is the best thing ever, it's like our nutella!! But we don't do it that way, we do it with sugar, eggs and milk!. Anyways that dulce de leche looks delicious!

I'm from Latinamerica (Ecuador) and they look delicious, another thing that we make that looks like this is pastelillo, that is a flour dough,filled with chicken, bread that is soaked in wine and other things, is savory and sweet. Ah, and the pronunciation of dulce de leche is really good! Only that the "u" in "dulce" is pronunciated like the "oo" on the word "good",or like the "w" on "new". Impressive recipe as always Gemma, your awesome!

Dulce de leche mouthwatering and you are totally right about how great kerrygold butter is I mean I don't have to microwave it to soften the butter.

Yummm! I just bought all the ingredients to make 3 different batches of your pop tarts. I'm making a chocolate batch, with marshmallow and cherry preserves.... Now I have to go back to the store. To get the condensed milk, so I can make these empanadas too, Lol.
