I think boiling oil needs to be buffed - not as strong as it was before but not as weak as it is now. Also Mongol trade - needs a nerf. It should be a nice eco bonus and not an absolute win condition.
Mongols always feels frustrating to go up against the exact reasons you mention. They tower rush you and then trade behind it, you're always chasing their game plan and then they have the keshik. At least when they only had horsemen it wasn't as tough!
Well you can always pick mongols and wreak other players. But with no walls you will get other benefits so most civs are quite balanced. Core needed an extra tc or walls. He losing 2 castles was a big L but it is what it is the Mongol player played very well.

the mongol trade landmark was positioned there because it was closer to the tc for trader garrisons if need be.
