    A very important feature that you failed to mention, at least I don't think you mentioned it, is the fact that this machine has a worm gear driven motor. A worm gear driven motor is far more durable and practically indestructible. Yes, it does have a belt but that belt drives a worm gear.

    I come from an old Italian family. My grandfather owned a restaurant and so did I. As a family, we've been making pizza for four generations, first by hand, then with small stand mixers (5 quarts), 300 pound capacity spiral mixers (for the restaurant), back to a stand mixer post restaurant days and finally to the Ankarsrum because once Whirlpool bought KitchenAid from Hobart, the quality went out the window IMO.
    There's a learning curve with the Ankarsrum as it is quite a different machine from the others, but once comfortable with how it works, you will be delighted at the quality and especially the quantity of dough (in this case, pizza) it will make.
    The biggest question is, dough hook or roller...I'm still figuring that out. Other than that, I use it exclusively for pizza dough. Our family recipe for pizza dough is not only simple, as are all truly Italian concoctions, but renders a product rivaled, but not beat, by the most famous NYC pizzerias. And here it is explicitly for the Ankarsrum (big batch):
    5 cups water.
    1 tablespoon instant yeast
    1.5 tablespoon sugar
    1 tablespoon salt
    Pour all that into the mixer bowl and turn the thing on. Let it go until everything is mixed.
    Add 5 cups of flour, let mix until fully incorporated.
    Read on!
    Now here comes the somewhat tricky part, but don't let it scare you. You want a dough that cleans the bowl, capice? That's how you judge whether it's a good pizza dough or not. Hydration? Probably around 65% if that means anything to you. Keep mixing, adding flour and/or water until you get the dough to the point where even without the machine's scraper, the dough is pulling away from the bowl and keeping it clean. Once you have that, let it mix until it's smooth, then stop.
    Pull the dough from the bowl, pour a little olive oil in the bowl, rub it all around the inside until the whole interior is covered, place the dough back into the bowl, roll it around until the dough is completely covered in oil. Put a mapeen (that's a lint free dish cloth for those of you are not Italian) over the bowl, or the plastic cover that comes with the machine and let it sit until the dough doubles in size.
    Turn out the dough and create balls of around 22 - 24 ounces each. Get yourself some cheap plastic bags with twisty ties., one gallon bags are perfect. Bag the dough balls, freeze them or just refrigerate until next day. Tie the twisties high enough on the bag to give the dough room to continue rising - which it will. Then throw a pizza party.
    Tip: If you're using a pan to bake your pizzas in, don't use oil. It's a pain in the neck to stretch your dough in oil. Use vegetable shortening or lard. In my family, we use lard for a crispy bottom like you've never seen or tasted. Just beautiful.

      This is a wonderful comment. I appreciate it so much. That is interesting about Kitchen Aid being purchased by Whirlpool.
      What type of pizza oven do you use? I am intrigued by all of the new fancy little pizza ovens but don't want to pay what they ask for them as we don't eat a lot of pizza.
      So please look at my other videos. I have several different posts with the roller and the hook. I do fresh wheat so it is definitely different than white flour. Oh, and do you use plain white flour for your dough recipe? All purpose?
      I did post a video just the other day of me making pizza dough with yogurt....you may find it interesting as it is very much unlike you recipe which does sound wonderful. Thanks so much, Tracy

    I love how durable it is. Last year right after I got the mixer my daughter decided she was getting married and wanted me to make the cake. The mixer made it possible for me to make so many double and triple cake batters and so many batches of icing. Went through 14 dozen eggs and 10 pounds of powder sugar in 2 days and it was always the same. I could trust this mixer to get it right every time! It is a beast that just keeps going!
    I got mine from breadbeckers and would definitely advise people to use them also. They did not have any open box mixers when I got mine.

      @@Tracy-Hart I know that my kitchen aid could not have handled the experience at all. She has huge problems with cookie dough and some bread dough. The Ank can cut through some of the stiffest dough and whipping up egg whites over and over again she just kept going. My daughter was so happy that I was able to do this. I had only made birthday cakes before this experience. Thank goodness for Utube.

    I have an older one than what you are showing which I bought used with just the bread dough attachments. I have owned it for many years and it is foolproof and powerful. Using it for the same recipes again and again nakes it effortless as you do not have to watch it.

      I'm not working for them at all. 🤩 This is such a fabulous mixer and it is really starting to see growth in the States. As a baker, I thought I needed to just try and do my baking with the KA, but that isn't the case. There is a much better option available but many don't know about the Ankarsrum. Hopefully this will help people know more about it that are searching / researching this mixer. There are also videos on my channel that show me using it.     I own the Ank and love it! You can do small and large batches. The roller and scraper combo is the best in my opinion. I have also made whip cream and butter with the clear bowl and beaters.

    I love my Ank! I’m a fairly new owner and have mostly used it to make the best, softest bread! I recently used it to make buttercream and cakes. I cake decorate and this mixer was amazing! It is gentle on cake batters and made the creamiest buttercream! And that was all with the roller only. It makes whipped cream so quickly in the plastic bowl/beaters. It has been a great purchase and I would do it again. We love purchasing equipment and grains from Pleasant Hill Grain and also Bread Becker’s.

    Great video! Have had mine going on 3 yrs now and admittedly still in a bit of a learning curve. Purchased mine at the beginning of the pandemic after struggling to regularly double-batch a basic white sandwich loaf in a KA Pro 5+. Just didn't have the time I thought I would to dedicate to it with online school, transitioning back to in-person and for our family a big move 2 months ago (after searching since November!!!) during this wonky real estate market. Looking forward to making more time to get better acquainted with it when our daughter goes back to school in the fall and I have a little more free time on my hands. 👌🏽 Side note...I sometimes use the lid (inverted) to scale out my flour - works wonderfully.     Just a quick comment on the transmission...
    Belt transmission is used for several reasons. First of all the belt is a sacrificial item that can slip or break if something gets jammed instead of breaks expensive gears or burning out the motor. Secondly, belts tend to run a bit quieter than direct drive transmissions that use gears or splined shafts. The belt does not require lubrication either.
    The downside is that it is less efficient at high torque applications than direct drive transmissions. This isn't really an issue though as mixing the dough with the dough hook or roller does not require monstrous torque. The wattage rating of the motor refers to the input power, not the output power. This is common on consumer machines but it means you really can't read too much into the wattage ratings.

    Great review of an incredible product!
    I loved the way you just kept the video going when things didn’t quite go as expected, like the roller & scraper being in the bowl. It was awesome.
    Great review though. It was very thorough and informative. I’ve had mine about 6 months now and just love it. After tearing the transmission apart on a competitors’ product, twice, I opted for an Ankarsrum. It’s very quiet, not too heavy, and does an incredible job. Should have bought one decades ago.
    Again, thanks for the GREAT video.

    I have an Electrolux Assistent (The company was owned by Electrolux for a period) from around 1970. Still works perfect!
    (Actually I have also one branded Ballerup Mastermixer, manufactured under licence here in Denmark, also aroumd 1970)

    Ok here goes: Cinnamon buns for around 36 of them: 150 grams of butter roomtemp, 1tbsp cardamumseeds powdered, 500 ml of milk, 1/2 tsp salt, 90 grams of white sugar or 3,17 ounces, 1 egg, 50 grams of fresh yeast or one pach of dry, 840-900 grams of all purpose flour.
    Desolve the yeast in the milk and add that with the egg to the mixingbowl, add the rest of the ingredients and the flour and kneed the dough. Based on how the flour absorbe the liquid one might have to add less than the 840-900 grams or just a little bit more, is the knowing the dough. When it´s all combined and silky smooth let it rest for 45-60 minutes or it´s dubbled in size. roll it out to a sheet about an inch thick. smear generously with filling on before cutting them into pieces and baking. Filling: 150 grams of roomtemp butter mixed with 180 grams of white sugar and 2 tbsp of cinnamon, let the buns rise 40 minutes on a bakingsheet or in a tin, we have speciall papercups here in Sweden for them. Brush them with a beaten egg. Then bake at 482 degrees Fahrenheit for 8 minutes. This is just one of MANY recepies on our cinnamon buns. And in december we skip the filling and the cardamum, add 1 gram of saffron that has been fused with the milk. Then rolled out to strips, that are then rolled into the figure 8. But the same temp on the oven and brushed with egg. You can find me on Facebook too :) same name different picture.

    I have an NG1 manufacured between 1940 and 1945. It is still working. Only one speed though the variable speed and the timer was introduced in 1969 if I remember right.

    I chose the Ank due to its strength and durability. I have friends and family who own machines that are 40-50yrs old and are still running.
    My main usage is larger batches of bread and mincing meat which a regular KitchenAid will not handle at all or with difficulty.
    If I'd been a pastry person I might have considered a Kenwood XL series, the folding tool seems to do things the Ank cannot do and the Kenwood is almost as strong as the Ank.

    I love my Ank. I’ve made bread, cakes, cookies, icing, cream cheese, butter and whipping cream. It’s a workhorse. Well worth the money.

    I have an older iteration when it was called the AEG Assistant, still a N24 that bought around 2000.
    I use it primarily for bread making and large volume cookie batches around the holidays.
    At the time I was looking at stand mixers, Kitchen Aid marketed all but their most expensive models with plastic gears. Those burn up with heavy use.
    No plans to upgrade, it does everything I need and stays on my counter. I did buy a Bosch Compact for smaller jobs that I can stash in a kitchen drawer.

      The flat beaters are typically used for cookies and the balloon whisks are great for egg whites, meringues or recipes / ingredients that need to be fluffy. 😍 Just keep practicing. Thank you for watching.

    Thanks for this review, Im seriously considering the Ankarsrum mixer, or the Famag mixer. As i mainly do pizza dough, i don't really need those extra accessories. I use a kitchen aid at the minute but find it struggles with dough with over 1kg of flour, so im wanting something that can handle 3kg of flour for example.

      My video with the "novice bakers, they add 1800 grams of flour plus the other ingredients. I have done more than that but have found for my bread that is a good weight for it to use. I made cookies today and it was 6.5 pounds of finished product. I haven't weighed it when I have maxed it out. Maybe I should do that for info purposes.

    Knowing how well these things are made, I got a used older model Electrolux n24
    They are incredibly easy to work on. It was working fine but I just went through it to check everything and service it so it will last forever. It will be an heirloom lol 😂
    By the way, I rarely if ever use the dough hook.

    The latest version has a 1500w motor at least here in Sweden. The video was good but I tink you miss out that all the buckets and tools works on all the machines. We have an 10 year old Ankarsrum and also older tools and two older buckets, one at least 35 yers old and the other even older and they works just fine. Our 10 year old one is 800w and that is the only minus I can se, its not stong enough when grinding meat. Goood Work!

      I bet you definitely have more options in your country. I did make a video about the mincer attachment. It was fine for a small job but if we are doing a large amount of meat, such as 50 pounds, we use our dedicated grinder. Thank you for your comment. 🙂

      The 120 v machines are lower wattage than the 240 V machines. I hear some kitchens in North America are putting in 240V power points so you can use the faster 240V equipment.

      he reason for the wattage difference is because of the different voltages used in Europe and the USA. However, the strenght of the machine is no different. Even on the fastest speed the european machine does not turn any faster than in the US. The Ankarsrum is NOT a gear powered motor and has very few moving parts on the inside. This makes it amazingly efficient. It has a belt driven, worm gear transmission which is an amazing design. And unlike your vacuum that has a belt, the Ankarsrum belt does not have anything putting tension on it so it will not wear out or burn up like on your vacuum cleaner.

      I have never had any problems with any of my mixes, regardless of hydration. It is a great machine. Some people prefer the dough hook depending on what they are kneading.

      @@lhw3 I don't have much experience with rye. I have used it with mixed grains before.
      Because you can adjust the setting of the arm, I would think that would help it to not be too harsh with your softer grains. The only thing I get paranoid about using my Ank for is divinity and only because the syrup gets so hot for that recipe.. I would trust the Ank with anything I am making....

    I like how you glance over the technical stuff regarding it being belt driven. Ask your husband to explain the advantages which is probably that the belt can slip and not burn out the motor or else you will need to keep some blinker fluid handy.

      Hey Dan. I have videos on the oat flaker and a couple of the pasta attachments. I owned the grain mill attachment and sold it. The grain attachment is good for small jobs but if you want to mill on a large scale, I recommend a separate mill. I was hoping for a positive note on the grain mill as I would like to limit all the gadgets but what you said seems to ring true with other makes that have a mill as sort of an afterthought. I consider mine to be a heavy duty piece of equipment that has a very important place in my kitchen. 😍 It has a much higher rating than that of simply a gadget. 😊😊😊😊😊😊😊 Best wishes on your research.       Thank you. To be clear the “gadget” I was referring to is the grain mill attachment for the Ankarsrum (Ank) mixer. I’m familiar with the various more single purpose grain mills such as the Mockmill which, I think is a fine piece of equipment. Many preppers agree and others have varying opinions as to there top choice . As for the Ank I believe it to be a very well built piece of equipment and have not seen nor read anything to the contrary. I guess the point I was trying to make is that for the most part these devices are built with a single purpose in mind. The add ons are usually afterthoughts and though they may function ok it’s just not there strong suit which, would be the reason you went with a separate grain mill. Hope that clears up my “gadget” statement. 😊

    Oh, about the scraper… the older models have just one hole for the scraper and it’s bigger (10mm OD) and the new scraper shaft is 8mm OD. The older model of scraper is no longer available.
    To solve this issue I bought bushings and epoxied them onto the new scraper and it works fine.

    So I've owned three Kitchenaids and burned out the motor eventually on each one. That's what inspired making the move to Ankarsrum. I've been using it almost ever other day for six years now and it is still going strong. Very durable, extremely well built, and reliable. However, just like everything, some products do things better than others - my only complaints with Ankarsrum the plastic whipping bowl. Especially if you're doing a lot of whipped eggs whites, plastic is not ideal as it holds onto grease. I usually wipe it out with some vinegar and it does okay, but I tend to just use the old fashioned hand mixer and a glass or metal bowl for eggs. I also wish the gears on the whipping bowl were more durable than nylon. I admit, I pushed it to the limits with some heavier batters and those are stripping on me. At least it is easy to replace those parts. I also wish the roller was not made of plastic, that seems to be deteriorating after years of use and I can only assume that plastic is getting digested inside of us. And very last complaint -- once in a while I just miss the specific applications where the Kitchenaid paddle did a great job. Such as whipping a hard brick of butter because you didn't plan ahead to take it out of the fridge. Or doing the final strong mix on a swiss merengue buttercream icing, which you don't really want to whip air into. So the wire whips don't really work and the roller doesn't really do the job. So, yes, some criticism. But, I would buy this mixer again. For the durability alone. I make three loaves of sourdough each week and it is an amazing dough/bread machine.

    Have you made the tortilla dough recipe from Bread Beckers in any of these mixers? That’s one of our favorite things to make but we’ve always had to mix it by hand. I would love to get a mixer that would do that part for us! We love tortillas.
    Also, how long did you wait for an open box? I wonder how often they get one.

      Yes. I have made tortillas but it has been a while. I need to try them again because when I made them before they weren't a hit. This mixer can handle that recipe. How do you press your tortillas? That was where I didn't get it right. 🙂

    I have the N23 version, it only has the one knob in the front, had it since febuary and is still trying to figure everything out. Being used to the Electrolux ekm 4100 that looks a bit like KA but is a great machine. The only thing i DON`T have is the cookiemixing thing. It didn´t come with my Ankarsrum and the beaters do not detache. Great video have not seen many of these in my native swedish language :) weird since it is a swedish machine right

      @@Tracy-Hart actually i don´t know. all the newer ones i´ve seen have the two knobs, but the machine has been made since 1940 so and both with the name Ankarsrum and the Electrolux name. Just happy i didn´t have to put out almost 700$ for a brand new one. Thank you too. Now you need to start baking swedish cinnamon buns in your swedish machine ;)

      I believe your expectations will be accurate!! I will tell you this, butter needs to be room temperature. It can't cream cold butter like the KA can. The flexible arm doesn't work well with cold butter. 🤩

    Stated wattage is usually peak wattage on startup. It is essentially a lie. Gear drives are stronger than belt drives. But a belt drive has some compliancy and can slip so it will not stall. But it is also a wear item and will have to be maintained.

      If I wanted to I would rely on autolysis to form my gluten network. I really like the flavor developed by long fermentations or poolish.
      Maybe I will still buy an Ankarsrum at some point. It's a great machine. But I prefer the stainless steel bowl and attachment of the KitchenAid for whisking.

      @@philipp594 they now have a SS bowl for wisking. I use mine for freshly milled wheat flour which is heavier and behaves differently than white flour. It certainly isn't for everyone but can definitely handle weight that the KA can't.

      I honestly don't know and I no longer have that mixer so I can't test it. I suggest emailing Ankarsrum directly to ask. I dont recommend the grain mill attachment though. It is slow and not very fine. I had it and sold it. My mom just got this one and it is great.       I just wanted to update that I emailed Ankarsrum and they responded that all attachments but the blender are compatible with the older N24 Electrolux assistent model. They were super quick to respond.

      Hi 780bambam, yes the Ankarsrum Assistent handles sourdough beautifully. You can skip the stretch and folds and use the roller and scraper, and you can make larger batches of dough. If you are using strong white bread flour, try letting the dough rest 10-15 min after the initial mixing of ingredients. Then set the mixer at 3:00 and knead 10 min with roller and scraper. After that, proceed with fermentation according to your recipe. If you are using any amount of whole grain flour, you might want to increase the rest period - it depends on how fine your flour is, but 30-60 min is common. Then knead with roller and scraper at 1:00 for 5-8 min. These are starting points to develop your own technique. Every kitchen is different, so learning to pay attention to the way the dough behaves will help you make adjustments to be successful with your particular flour / climate / sourdough starter. ~Michele

    Hello and thank you for sharing. I keep hearing that only soft room temperature butter can be used in this mixer. I hope this is not true. I am not a bread maker. I’m a pie maker. For the flakiest pie dough, I need to use very cold butter. Would you say that this mixer would be useless to me or do you know if it can do what I need it to do for my flaky pie dough. Thank you ahead of time for your reply.

      Hey Michel, I reached out to a friend who makes a lot of home made pie crusts. My friend, who is an Ank owner and also a KA owner, recommends using the roller on a very low speed and grating the cold butter just until incorporated and then finishing by hand.
      I know for cakes the butter must be room temperature or the Ank will struggle mixing it.
      I would keep an eye out for an open box unit from bread beckers. Then if you aren't satisfied, put it up for sale in the Ankarsrum group on FB. They resale quickly and an open box unit is a good price so you should be able to recoupe most of your expense. I hope this helps.

    So, I am on the cusp of the decision to purchase either an Ank or KA. A question for everyone - how can you use the Ank to mix other (non-batter) ingredients, such as really heavy fruit cakes or particularly minced meats where mixing, rather than kneading is required? The KA's 'K' blade does this job, but how do you achieve it on the KA?

      For heavy cakes you will most likely want to use the roller.

      The Ank is a great mixer. I actually looked at my kitchen aid yesterday and was trying to figure out storage for it somewhere else other than my kitchen because it is just in the way.

      @@jonathanm9436 the plastic bowl and those attachments are not for super heavy items....so you would need to be careful. The great thing though is they offer a great warranty. I believe it is one year on those pieces. I suggest checking behind me with your supplier and if so, test out those recipes and gadgets well before the one year mark in case there any issues. 🙂
