    You will never know how calming your videos are to me. I'm a school teacher and I try to watch (or re-watch) one of your videos in the morning while I have breakfast in order to set the tone for my hectic days. Your videos -- the music, your soft voice, your cute kids, the educational aspect of growing your own food to ensure better health -- all of it just brings a certain peace to my soul and mind that set me in the right mood for work. Thank you so much and please don't stop producing them!

    I make ketchup with red pepper and apples, it's the best. 5 kg of tomatoes, 2 chickens, 10 red peppers, 5 apples, finely chop and cook until everything falls apart. Put everything in a blender and blend.then strain on a fine grater and put back on the stove, season to taste and cook until desired thickness, I cooked for another half hour.

    I like how RoseRed Homestead uses litmus paper to test the liquid foodstuffs before water bath canning just to make sure it's acidic enough. That might be something you could implement when you're unsure if you can water bath can it or not. You guys are so amazing, and I cannot thank you enough for producing content for all of us. Much love!

      Is this the point where I should shock people and tell you that people in other countries water can everything because pressure canners aren't a thing? It's actually a very American thing. There are some rules to follow when doing it, especially when it comes to meat, poultry, fish and beans. Those are the things where botulism is the biggest concern.

    Remember when I was maybe your daughter age when I help with canning my grandma and my mom, a lot off working but worthed, love it,also love to work in the garden ( we don't have that big like yours).We also go in the woods for blackberry for canning, porcini mushrooms from woods mix with vegetables (onions,roasted bell peppers),taste amazing even my grandma never measure. God bless you guys, God keep you under His protection. Oh,in late fall we pick up rose hips and grandma make preserves.

    In your hunt for your perfect BBQ sauce, have you considered incorporating some korean elements? Gochujang or gochugaru? Perhaps using balsamic vinegar instead of ACV? I know you are trying to use all home grown or made but as Stacy says "there are supermarkets for a reason." Good luck on finding your One True Sauce 😀

    You all are doing so a amazing with the gardening and preserving this year. It's too bad about the corn 💔 Looks like you need another high tunnel for a longer extension to the growing season. Those green beans would've been perfect in there. No matter, as I'm sure you know exactly what you are doing.
    You preserve the most fabulously delicious looking food!! Gonna go watch again 😂
    P.S. I was happy to see you use more additives for your soil 👍 I hope you get a wonderful crop of broccoli

    Always love your stuff and look at it the moment I see it on my feed. You seem so much more professional and knowledgeable these days and anything you talk about is always so interesting. I am finally on an allotment in the UK, you inspired me to apply and I am so glad I did. It is 32mtr x 6mtr and covered in 6 months of weed growth with a rotting shed and a broken glasshouse but I am loving the thought of the challenge. The previous owner left it in a real state but I have spotted blackberries, raspberries, strawberries, apple and pear trees and rhubarb whilst weeding and am harvesting already. You and your family are always a bright moment in my day, wishing you all the good things and a bountiful cropping year :)

    When deseeding jalapeños I use a grapefruit spoon/ citrus spoon. Does a quick job of it. Have you looked into Souper Cubes for freezing some of you sauces, broth etc. I just got some and find them very helpful. I've thus far frozen chicken broth and chili in them. I got the one cup and two cup sizes. Once the item if fully frozen, I put in vacuum seal bags and seal. I find storage in our small freezer is better with these. Joy Giles

    @rik80280 2 года назад +1

    I feel like a mix of hybrids and open pollinated gives you the best of both worlds. You get the specialized hybrids for more production (earlier, better disease resistance, etc.), but you also can save seeds (or get volunteers) from the stable open pollinated varieties. It doesn't make sense to me not to take advantage of the specialized breeding programs when they have done so much good work (especially for tomatoes (disease resistance) and cauliflower (earliness)!). We don't need to abandon all the old varieties to take advantage of some new ones.

    • @LittleKi1

      Vinegar needs to have at least 5% acidity to be used in food preservation in order to create the high-acid environment that protects from pathogens and botulism. Commercial ACV clears that bar. Home vinegars often do not. Which means you have an excellent product for cooking or beverages, just not for food preservation.
