@@yeahyeah5976 as said before here. He repeats himself a lot. Which is often done in Belgium: you give an answer to something and then explain that same answer again for good measure (but not necessarily with extra useful information)
to be clear: i agree that they should have subtitled everything, but that's my personal preference.
I can almost see the passion dripping off this guy. It's clear he's an enthusiast for his craft, even if I can't understand what he's saying. Thanks for letting us into your kitchen and showing us these elemental steps.

WBPStars, la serie de recette avec le chef Karen est vraiment tres bonne. Je trouve qu'il cuisine beaucoup plus que les autres chefs qui se contentent un peu de trop de juste mettre quelques ingrédients dans l'assiette. Merci and keep it up !

Maybe he can turn fierce during service but in the video i see Mastery skill set with humility.
amazing to see him do every single step with so much respect and attention to detail, a true perfectionist and i bet a great teacher. it's an open kitchen, so there is no space for shouting and aggression.

Your theory is utterly false. Patrons sometimes even enjoy watching cooks yelled at for fucking up. I really don’t understand these kids in kitchens today afraid of being yelled at. It’s the job. If you don’t respect the food you’re making you deserve someone screaming at you.

I just finished watching all the videos from this place and chef, amazing job wbpstar, we need more on that to improve the standards, the best one was the girl making a choc pie, but not because of the pie. he loves butter, guess the best way would be he making his own butter because Jesus he uses a lot of it.

La vidéo est intitulée couscous revisité. Donc Biensure c’est différent du couscous que t’as grandis avec.
@@CaptainC0rrupt Oui oui, nous voyons bien que cest revisité. L'exécution est impeccable, il y a de la recherche derrière (je parle exclusivement du "couscous" et non de la partie libanaise du plat).
Cela dit, il a beaucoup d'imperfections dans l'association de textures et de saveurs, et puis une grande confusion dans le thème du plat. Mange t on de la shawarma ou du couscous, marocain ou libanais, africain ou moyen oriental?
Après tout, c'est un restaurant étoilé et il doit y avoir de la suite dans les idées, et on ne peut pas se permettre de tomber de le cliché de l'"oriental" qui englobe toutes les cuisines du Maroc à l'Iran.
A mon humble avis, Chef Torosyan n'a pas testé le couscous traditionnel marocain, qui se rapproche le plus de ce qu'il a essayé de décrire au début de la vidéo : léger + contemporain, et surtout, sans RAS EL HANOUT, qui est bien trop puissant (si de bonne qualité) pour un agneau de lait poêlé.
Juste avant de conclure.... le bol de harissa + mirepoix ... on en fait quoi ? On fait tremper la shawarma dedans? On mange à la cuillère? En bruschetta ? Ça cloche méchamment à ce niveau là.
Enfin, Chef Torosyan est un excellent chef que j'admire et dont je suis la carrière de très près. Mais ce plat doit être celui que j'apprécie le moins dans son répertoire. Je suis certaine que c'est delicieux... mais... dans un restaurant étoilé, etre delicieux pour un délicieux n'est pas assez.
@@imane867 Il dit que c'est un plat avec de l'humour et visiblement vous en manquez. Vous avez besoin qu'on vous explique comment manger? Qu'on vous dise explicitement à quelle tradition se rapporte le plat pour l'apprécier? Apparemment les clients n'ont pas ce problème puisqu'il n'arrive pas à l'enlever de la carte...
Je ne vous apprends pas qu'il y a mille façons de faire du ras-el-hanout, plus où moins corsé...

The selflessness of the Chef; he could be taking a mis day break instead of deno the lamb dish. Probably will also call the PM service.
Brilliant how we only at the very last moment find out why the dish has couscous in its name.
Now imagine a table of 10 people ordering that level of food.. and then a table of two, A five and so on.. 14 hours a day
It's a very easy dish to put together as long as the mise en place was done right. It can be plated, and served in less than 10 minutes.

Combien de cholestérol vous délivrée à vos clients ??🤔😳😬, fallait enlever la grasse entourée et laisser que la partie maigre , en plus humus et shawarma n'a rien à voire avec le couscous sa ne mix pas , et finalement le couscous se fait avec des légumes de terre sa toujours étais le cas depuis l'antiquité pour une seul raison que le goût ne sort pas du terme ,
Un conseil d'un chef à un autre essaie d'incorporer le couscous sécher à la partie croustillant Comme une sort de chapelure ,débarrasser vous de shawarma et humus , fait fritter les pois chich à la friteuse pour donner une autre dimension à votre plat ,incorpore des légumes couscoussiers comme pomme de terre ou Jérusalem artichauts ,rave ,carrot,courgette avec un style de cuisson défèrent et tu va réussir à finaliser un couscous dine d'un star Michelin , bon courage .
