    More storage tips please! So much food is wasted and thrown away from poor storing. Doesn't help we have to battle the humidity here. Also, would love to know how we can adjust baking recipes with the humidity. Thanks! Looking forward to more episodes.

    Just want to share, another essential in my kitchen is cooking wine and rice wine. I’m live in Chinese household so I use them quite often. They good for cooking and marinades, especially for porks and seafoods. And they smell really nice when u cook with them too.

    wow! this video is really helpful for me as someone who picked up cooking during CB. love how informational it was without getting boring. the host ming has a great personality as well! looking forward to more episodes!
    P/S - Can there be an ep on weekly meal prep? ☺️ eg asian recipes with ingredients/flavours that would hold up well after freezing and reheating!

    I would like to know more about the oils please. For example I have found out recently that coconut oil is not healthy to eat (suitable more as a part of a skincare routine for example but not much for eating as it includes lots of unhealthy fatty acids). I would like to know which oils are suitable even after being heated (as it was mentioned that the olive oil isn´t) and which are better just for salads.

      To me sunflower oil is the best for cooking at high heat. Its smoke point is really high, neutral flavor and pretty cheap :) Another interesting Oil to look at is Pumpkin seed Oil. Its supposed to be healthy and its also a flavorful rollercoaster

      Not true at all, coconut oil IS one of the healthiest to eat and vegetable oils the worst.

      @@zoneinfinite i though that as well, but I am studying medicine and part of my course was biochemistry lessons, where the professor was explaining to us, that coconut oil is not as healthy as some companies are advertising. I was surprised too, but he is a capacity in his field and i trust what he was saying, because he even explained why. I mean not trying to convince anyone as everybody has their beliefs, just saying what i encoutnered. Since that time i use the coconut oil just as part of my cosmetic routine and not for eating. Some vegetable oils are unhealthy as well, on that i agree. Thats why i asked about chapter about oils, would be interested to know more

      In general, flavourful oils do poorly at high heat cooking. The same compounds that give you flavour and smell will burn off and not survive at higher temperatures. At best you'll have wasted more expensive oils, and at worst you may find off-flavours and even bitterness.
      Refined oils have these compounds removed, and the remaining oils are very neutral in flavour. They will also stand up well to high heat cooking, as their smoke points increase (this is the temperature at which compounds in the oil start to burn or turn into smoke).
      As for the wisdom regarding the various types of saturated, unsaturated, omega and plant/animal based oils - I find that every couple of years new studies appear and our opinions change. Butter, for example is now seen as more natural and 'better' today, whilst margarine is regarded as 'unhealthy' because of its heavy processing. Take everything in moderation!

    Thats all the essential? I believe there are few more essential ingredients than those.
    I LOVE mayonnaise, but I dint consider it essential as I only use it for making sandwiches or rarely as a dip for fried foods.

      The alcohol burns off. If you are intolerant it will not be an issue. But you can usually use a vinegar instead :)

      his talking about extra virgin olive oil, most of the time it is used to flavour things instead of being used to cook with, like how you can dip some bread into a puddling of olive oil and just eat it, not to say you can't cook with it but it's mainly used for its flavour

      @@kiagol159 I know. It was a rhetorical question. See 6:56 , the chef said should not cook with it. As with many cooks I know and they learn in cooking school, never to cook with it. Many Italian chef cooks with it.
