I grew up in the South & I’m white. Anytime I look for a childhood recipe on RUclips it is always a black creator who ends up cooking exactly like my grandmother did & my mom does.
She would be proud indeed. I just happened on this video because my daughter's co-worker asked me to make "Chicken N" Dumplins for her. Both of my parents were from Mississippi and were great cooks. My mother owned a restaurant so it was my dad who taught me how to cook. She would be gone before we got up in the morning, and get home after dinner. So, my dad started teaching me when I was 10 and I am now 74. My youngest daughter has a catering business, and my oldest is a wonderful cook too. I guess it's in our DNA. Your dish looks delish. I call it chicken and dumplings if it's made with drop dumplings. If it's made with rolled dumplings it's "pot pie" (often made with ham). Pretty sure it's a Pennsylvania Dutch thing. Both are delicious. Nice job!

Girlfriend I got to let you in on another little secret about bones..... When you have a ham bone left over from a ham dinner you cooked. Do you know that same ham bone that you use in your collard greens or turn ups or beans, that same hambone can be refrozen and reused numerous upon numerous times. And it gives the same amount of the season every single time you use it because the flavor comes from the inside of the bone of the marrow inside the bone. I just wanted you to know that little tip because you obviously know that all the flavor comes from the bones of anything also!!! Also, the impurities/scum are denatured proteins. They add bitterness to the dish and can even make it spoil faster! Good on you for knowing to remove it!

We call “dumplings” lumps of dough dropped on top of the chicken and cooked covered until done. The dough is basically biscuits cooked in the broth. In the extreme west of NC, the dropped dumplings are called chicken and pastry and they don’t have anything comparable to our pastry. It is the definition of comfort food!

This is the way my MawMaw made chicken and dumplings. We would roll them out in long slices and cut a slit in the middle. We then laid them on wax paper and covered with more wax paper. This is done Saturday night. After Sunday church we would go back to her house and she would get the chicken broth/chicken heated up and when boiling - add dumplings. I’m going to try your dumpling recipe as MawMaw never wrote this recipe down. Thanks so much!!

I made some dumplings a couple of weeks ago. The flavor was perfect, but they basically fell apart. I'm thinking after watching this that I added too much fat. I used butter in mine. Gonna try again soon.

I make drop buiscut dough and it thickens the broth nicely. I do love rolled out buiscut dough dumplings as well. Since I am older now and crippled up with arthritis I have to simplify my cooking from scratch so it is easiest for me to do drop dough. We only had the rolled out dumplings! My brother who loved them so much picked up mom's recipe and I got to say he outshined her! She always said she didn't like those big dumplings that were all doughy! And I got to say I I definitely agree with her. The rolled out dumplings definitely have more of the chicken and sauce on them

She had one of those rolling things that cut them "wavy" and let us cut the biscuit dough. Oh, the foam. It's from the chicken (safe) and if you need the liquid for a sauce, skim it out. Otherwise, forget it.

And we actually raised chickens , and she would wring a chicken neck, put it in hot water pluck the feathers and make dumplings and they were the best. Make everything from scratch to rolling out the dow…Without the cream just adding water/chicken broth, salt and garlic powder/butter…. That’s what I took from her passing at the ripened old age of 107! Still in her right mind…her recipe she gave me her blessing on cooking…that was her last meal
Fantastic...you definitely made her proud. With my rolled out dumplings I use 1/2 cup chicken broth and 1/2 cup sour cream as substitute for milk, salt and pepper and I also use cream of chicken soup as well....Kudos to you Diva!

I make them occasionally homemade.... sometimes I just buy the frozen dumplings they are called kettle dumplings delicious....just add to your chicken and your broth... delicious....I love the flat ones instead of the drop ones....I think it depends on what you were raised on...
Drop dumplings. I take a cup of home made chicken broth instead of milk because that seasoning!! Broth: chicken thighs and two split breasts (Skin on!!) Cover with water, add seasoning. Seasoning: salt, lots of black pepper, celery seeds, poultry seasoning, lots of rubbed sage, lots of golden curry powder, garlic powder, onion powder, turmeric, smoked paprika, herb de Province. Once meat is cooked, remove, remove skin, debone and shred meat. You can save the skin, cartilage and bones to make bone broth later. Remove 1 cup of broth, add self-rising flour to broth until a loose dough forms. Add shredded chicken back to pot and bring to a rolling boil. With a teaspoon, drop dough balls slowly into pot and let them form. Add more dough as needed. No need to add milk or flour to your pot cuz enough flour leaves the dumplings to make that good roux! Stir til all dumplings are set. You can eat now or let it simmer on low heat or put it in the fridge til the next day when all those flavors have really come together!

Ive made milk dumplings, but the dumplings seem to cook to pieces. My 94 y.o. mother in law used the chicken broth in her flour, no grease or anything else. Just flour, broth rolled out and cut. Most delicious ever!!!

I make the rolled out style like my mother's. But here's an easy tip for everyone....roll out the dough as thin as you like it...then...take a pizza cutter and zip thru that dough in a few seconds flat. Bingo! All cut and ready for the pot!
Hello - I made your chicken and dumplings recipe yesterday. Following the recipe to a T. It came out wonderful. Not only was it delicious, it was astecially pleasing to the eyes. The yellow color of the soup and smell was amazing. I had a bowl and a half. ( Tried to go for 2 bowl s but I was soo full afterward.) The dumplings were tender. It reminded me of my childhood. My grandmother passed away before I could get this recipe but yours looks exactly like hers and I plan on making it tomorrow night for supper I don't understand these people that put peas and carrots and onions in there that's not true Southern chicken and dumplings but I would love to see other ways you can make dumplings can you use canned biscuits or are drop dumplings thank you so much again it looks awesome❤

I'm a rollout dumpling kinda guy. I use a pizza cutter to make the dumplings at the end. This is delicious btw. :)
Never had those noodle- like dumplings. I always liked the fluffy ones but I'm willing to try! If I wanted a noodle like dough, I'd just make chicken noodle soup!
i typically make the fluffy ones too! but the rolled out type is good as well

It is midnight and I am so hungry that I would make this right now if I thought I wouldn't wake my wife! My mom made it like this. She had one of those rolling things that cut them "wavy" and let us cut the biscuit dough. Oh, the foam. It's from the chicken (safe) and if you need the liquid for a sauce, skim it out. Otherwise, forget it.

yes, you can leave out the milk if desired and use chicken broth. it will be less creamy , but still good.

And we actually raised chickens , and she would wring a chicken neck, put it in hot water pluck the feathers and make dumplings and they were the best. Make everything from scratch to rolling out the dow…Without the cream just adding water/chicken broth, salt and garlic powder/butter…. That’s what I took from her passing at the ripened old age of 107! Still in her right mind…her recipe she gave me her blessing on cooking…that was her last meal

Fantastic...you definitely made her proud. With my rolled out dumplings I use 1/2 cup chicken broth and 1/2 cup sour cream as substitute for milk, salt and pepper and I also use cream of chicken soup as well....Kudos to you Diva!

I make them occasionally homemade.... sometimes I just buy the frozen dumplings they are called kettle dumplings delicious....just add to your chicken and your broth... delicious....I love the flat ones instead of the drop ones....I think it depends on what you were raised on...
Drop dumplings. I take a cup of home made chicken broth instead of milk because that seasoning!!
Broth: chicken thighs and two split breasts (Skin on!!) Cover with water, add seasoning.
Seasoning: salt, lots of black pepper, celery seeds, poultry seasoning, lots of rubbed sage, lots of golden curry powder, garlic powder, onion powder, turmeric, smoked paprika, herb de Province.
Once meat is cooked, remove, remove skin, debone and shred meat.
You can save the skin, cartilage and bones to make bone broth later.
Remove 1 cup of broth, add self-rising flour to broth until a loose dough forms.
Add shredded chicken back to pot and bring to a rolling boil.
With a teaspoon, drop dough balls slowly into pot and let them form. Add more dough as needed.
No need to add milk or flour to your pot cuz enough flour leaves the dumplings to make that good roux!
Stir til all dumplings are set.
You can eat now or let it simmer on low heat or put it in the fridge til the next day when all those flavors have really come together!

Ive made milk dumplings, but the dumplings seem to cook to pieces. My 94 y.o. mother in law used the chicken broth in her flour, no grease or anything else. Just flour, broth rolled out and cut. Most delicious ever!!!
ONLY WAY i ever made chicken and dumplings is with can busicuts . now adays the cost biscuits way to high. cook with lid dumplings comes out kinda globbly without lid dumpling comes out fluffy gotta try your way without biscuits. thank you
I make the rolled out style like my mother's. But here's an easy tip for everyone....roll out the dough as thin as you like it...then...take a pizza cutter and zip thru that dough in a few seconds flat. Bingo! All cut and ready for the pot!
Hello - I made your chicken and dumplings recipe yesterday. Following the recipe to a T. It came out wonderful. Not only was it delicious, it was astecially pleasing to the eyes. The yellow color of the soup and smell was amazing. I had a bowl and a half. ( Tried to go for 2 bowl s but I was soo full afterward.) The dumplings were tender. It reminded me of my childhood. My grandmother passed away before I could get this recipe but yours looks exactly like hers and I plan on making it tomorrow night for supper I don't understand these people that put peas and carrots and onions in there that's not true Southern chicken and dumplings but I would love to see other ways you can make dumplings can you use canned biscuits or are drop dumplings thank you so much again it looks awesome❤
