But your trick to figure out whether it's too much or not is something I'm going to be trying from now on! What a game changer! My mama didn’t like milk in her dumplings just water maybe because she grew up real poor but she got to where she couldn’t do it (she lived with my sister and my sister doesn’t cook dumplings) she would call me and say Alice would you make me some chicken and dumplings and don’t use milk in them. My tip for you pizza cutter is great to cut the dumplings 😊 have a great day.

I make a hamburger stew as my family calls it. I do use a lot of ground meat like you do. So I make a million things with hamburger meat as you know. Let me know if anyone is interested in the recipe that my family has made for years. We are Italian so everything has a tomato sauce lol. But it is one of my favorite meals. With a hot buttered homemade roll? Omg! I think I'm going to make it tomorrow now that I'm thinking about it. I need to know how to upload my recipes to start cooking for people. I make Polish dumplings aka kluski. They are a sticky dough I make with flour salt egg and milk. I drop them into the boiling broth from the end of a teaspoon. They puff up a bit so you just want about half teaspoonful or a bit less. Once they float, boil for 10 minutes and they are done. They aren’t as sturdy as your dumplings but boy are they delicious. You can also fry them in bacon grease after you boil in salted water. Major delicious. It’s an art. My family loves them. They are quite versatile. They are wonderful in haluski as well.

I'm going to have to try this white pepper. Does it taste the same as black pepper? Our family uses dark meat chicken for everything. Especially making a broth. Breast meat chicken is okay for certain recipes, but dark meat has the best flavor for broths.
I have a dumpling secret that I’ve just for many years and to this day my family has no idea I didn’t roll out those flat dumplings. I would love for you to try my way. I promise you’ll NEVER go through all this work on dumplings again.
I love that! I do add a few carrots and a few stalks of celery and big pieces while I am boiling my chicken. You can take out the vegetables at the end but the flavor it puts in? It's fantastic. I've made homemade dough for dumplings and I have also used the biscuits. If you just roll out the biscuits and cut them in pieces it works great especially if you have not a lot of time to focus on dinner. It's always best to do homemade but it's still really good with the biscuit rolls. I prefer the other way but sometimes life gets in the way. When I make homemade biscuits? I always leave some go left over to make pies and dumplings. I use self-rising flour though, maybe I'm wrong. I do enjoy watching your videos. God bless you and your family

What you are doing Talli is called cooking. My Mom and Grandma did it and I do it, so does my lovely wife. I was raised with fluffy dumplings. They were made with baking powder like big biscuits I love it both ways. I use breast and dark meat. I add a carrot, onion, and celery, with the chicken meat while I am cooking it as well. Then I take them out and discard or feed the chickens with them. It adds a little nourishment and flavor. There are so many ways. Thanks for cooking for us Talli it's so comforting.

Thanks so much 😊… As far as freezing them, it does make them break down after they thaw and reheat… Some of the dumplings hold together but it ends up being a big ole pot of gravy more than anything
Oh yes, nothing like a big pot of homage chicken and dumplings on a cold day. I use my pizza cutter to cut mine. And I have been known to use heart shaped cookie cutters in the past LOL they look delicious!!

No salt at all ⁉️🤔 You wouldn't EVER make biscuits without adding some salt! But I guess they soak up the salt in the broth. The Knorr boulion has a LOT of salt in it!

As I grew up with my family they loved all types of greens. Turnip greens, mustard greens, spinach greens, collard greens, etcetera. I never loved greens. I'm going to have to try your fried collard greens to see if I like those.
I make this also with smoked pork neck bones, cook the bones for about an hour; take them out and set them aside. Make the rolled dumplings she does, but if I am making ham flavored I put a teaspoon per cup of flour ham bouillon…if making chicken dumplings do the same thing with chicken bouillon…

How are you doing today? My grandmother taught me how to make chicken n dumplins My grandmother was born at the end of the 1800s so she was very old-school The first time I met her, I was around five years old because I was an Air Force brat She would start up her big O huge pot of water with salt. Sometimes she would add chicken, but she hated to slaughter her chicken. She said chickens were better alive than dead. And I’m not a big chicken eater, but if I do make a big pot a dumplins, I will put a small chicken breast in there skinless And I also use the better than bouillon roasted chicken Instead of parsley, I’d like to use dried celery flakes I think it as wonderful flavor my grandmother did not do that Now she had a huge bowl in her kitchen that was always full of flour so this woman cook biscuits every day When she was getting ready to mix up for dumplins, she make a well in the center of that flower bowl and move that flower around to leave the very center open. She would take around three eggs, size large and she would use buttermilk if she had it or as you call it sweet milk. One hand, you only use one hand she tell me as I sit on the stool to mix it up, and you kept adding, as your hand slowly brought in flour into the well with the lard and milk and you did that do you have enough for your dumplings hers she liked it a little more sticky now my grandmother did not do no rolling out. I don’t roll out the dough either, but we stand over that broth and we pinch off pieces of that dumpling and drop it into the broth. We would cook it covered for 10 minutes on low heat, then uncover for 10 minutes keeping the dumplins and that nice thick broth and then they were done There are a lot of people that like dumplings, different wise I don’t want them to taste like biscuits or when you bite into it is got that biscuit type texture I like mine a little chewy then enjoy your meal. I love collard greens But I just don’t see eaten biscuits or rolls with the dumplings same thing But dessert a chocolate cake sounds yummy Keep on making those nice Texas recipes And remember, the one thing that irritates me more than anything is to see recipes of chicken and dumplings with vegetables in it it is called chicken and dumplings for a reason Take care and God bless

Ok, so… I’m using all purpose flour…. Buttermilk and shortening… the buttermilk has a reaction enough that I don’t need baking powder (for my dumplings)… I don’t like for my dumplings to be puffy… I like them dense… The only reason I don’t use salt in my dough is because my pot liquor is salty enough with the chicken bouillon plus the added salt n pepper… the dumplings level it out for the perfect bite .😊😊
I have made dumplings just like this with my granny ,so good ,you go girl ! We put ours on the cookie sheet and froze them ,when dinner came we put them in the pot and we had dinner with all the family,yes that is good ,granny and I cooked many things ,had a table full for everyone who showed up ,it was a great time !

I add a lil milk to the pot after the dumplings are done, makes the broth thickened , so good with cornbread

My grandmother taught me how to make chicken n dumplins
My grandmother was born at the end of the 1800s so she was very old-school
The first time I met her, I was around five years old because I was an Air Force brat
She would start up her big O huge pot of water with salt. Sometimes she would add chicken, but she hated to slaughter her chicken. She said chickens were better alive than dead.
And I’m not a big chicken eater, but if I do make a big pot a dumplins, I will put a small chicken breast in there skinless
And I also use the better than bouillon roasted chicken
Instead of parsley, I’d like to use dried celery flakes I think it as wonderful flavor my grandmother did not do that
Now she had a huge bowl in her kitchen that was always full of flour so this woman cook biscuits every day
When she was getting ready to mix up for dumplins, she make a well in the center of that flower bowl and move that flower around to leave the very center open. She would take around three eggs, size large and she would use buttermilk if she had it or as you call it sweet milk.
One hand, you only use one hand she tell me as I sit on the stool to mix it up, and you kept adding, as your hand slowly brought in flour into the well with the lard and milk and you did that do you have enough for your dumplings hers she liked it a little more sticky now my grandmother did not do no rolling out. I don’t roll out the dough either, but we stand over that broth and we pinch off pieces of that dumpling and drop it into the broth.
We would cook it covered for 10 minutes on low heat, then uncover for 10 minutes keeping the dumplins and that nice thick broth and then they were done
There are a lot of people that like dumplings, different wise I don’t want them to taste like biscuits or when you bite into it is got that biscuit type texture I like mine a little chewy then enjoy your meal.
I love collard greens
But I just don’t see eaten biscuits or rolls with the dumplings same thing
But dessert a chocolate cake sounds yummy
Keep on making those nice Texas recipes
And remember, the one thing that irritates me more than anything is to see recipes of chicken and dumplings with vegetables in it it is called chicken and dumplings for a reason

Ok, so… I’m using all purpose flour…. Buttermilk and shortening… the buttermilk has a reaction enough that I don’t need baking powder (for my dumplings)… I don’t like for my dumplings to be puffy… I like them dense… The only reason I don’t use salt in my dough is because my pot liquor is salty enough with the chicken bouillon plus the added salt n pepper… the dumplings level it out for the perfect bite .😊😊
I have made dumplings just like this with my granny ,so good ,you go girl ! We put ours on the cookie sheet and froze them ,when dinner came we put them in the pot and we had dinner with all the family,yes that is good ,granny and I cooked many things ,had a table full for everyone who showed up ,it was a great time !
