What I Eat in a Day | Gluten and Dairy Free

- Follow along with me on a day of eating!
Adzuki Bean and Rice breakfast:
1/4 cup white rice
1/4 cup adzuki beans (or oatmeal)
Rinse
Soak in 3 cups water.
Summer over low heat until beans are tender and rice is soft, about 30-45 minutes.
Season and eat!
Hot chocolate mix:
1 cup cocoa or cacao powder
3/4 cup sugar
1/2 cup water
Combine in saucepan and let simmer for 3-5 minutes. A longer simmer will result in a thicker syrup. Keeps in the fridge for a while. Use 1-2 tbsp per cup of hot chocolate.

I am so glad I found the Monash university app, it’s a lifesaver for me, no more ibs-d! I can handle 1/3 cup of drained and rinsed cannellini beans no problem, but that’s the only bean. Great video ❤
