How Chandra Does Food
Добавлен 16 апр 2022
Hi! My name is Chandra and this is how I do food for myself, my husband and my two children. I buy the best food I can at the best price I can by buying in bulk, shopping locally at farms and producing what we can in our New England garden. I use those ingredients to make as much as I can from scratch, because I love the quality and creativity that comes from cooking and baking in my own home.

Ever just use European flour?? I went from GF King Arthur flour to French and Italian flour. French flour is known for abnormally low gluten content apparently too .. thanks for the video..! Was looking to see if maybe a dash of vinegar in the dough would work as well.
@@m1k3_flo That’s interesting. I have heard of people tolerating European flour over American, but I didn’t know it might have to do with a lower gluten content. I would be very interested to experiment with that. Good idea on the vinegar. I’m actually trying that bread again today with just one ferment instead of two, so we’ll see how it goes! Thank you!
@@HowChandraDoesFood no I don’t think it’s lower gluten content, I think it’s just non GMO and no glyphosate etc… our food is literally poison. Very VERY sad but true. God bless America’s future please
Looks delicious!
Thank you!
Wow I'm impressed how long do they last
I always slice and freeze mine as soon as they are completely cool. That way they feel fresh when they are thawed. In the freezer, they last months - although they are usually not in there that long! On the counter in a sealed bag, I don’t know, maybe four days to a week and probably at the end of that time they would need to be revived in the toaster. And in summer or a humid environment, they would get moldy even sooner.
@@HowChandraDoesFood thank you i will try this out! watching ur video for steps :P
@@jaskamalmann3341I’m making them myself right now!
I am so glad I found the Monash university app, it’s a lifesaver for me, no more ibs-d! I can handle 1/3 cup of drained and rinsed cannellini beans no problem, but that’s the only bean. Great video ❤

@@JoePo1982 She was!
Nice. Now I am looking for this magic stone and a dutch oven. It is helpful to know which flour I can substitute with another kind , almost every recipe got something I don´t have or even don´t know where to get.
@@gobontu6224 Instead of a stone, you could use a heavy bottomed pan or baking sheet! Dutch ovens are very helpful, but I have seen people use roasting pans, or really anything that can go in the oven, has a lid, and will fit your bread inside.
Ahhh! Bread so pretty! You could make videos of just slicing bread and I would watch them. 😂 Time to start a bread CSA.
It’s absolutely been on my mind since we talked about that!

i am wondering, i never had lard because i live in a smelly desert nation, how does it compare to regular butter?
@@lgjosad In taste, totally different. In function, very similar.
Great video. Love this kind of experimental trying to find the best way to process a huge batch of product. For lard what I do, is I vac seal it with a lot of extra space in the bag, sous vide at 50C so 122F for like 8-10 hours, take the bag out, snip a bottom and top corner, and pour off the fat into containerswith a fine mesh strainer in the way. Least hustle imo, though some energy expenditure for sure
@@Sir_Loin_Of_Beef That sounds so easy! Less cleanup too. And I bet the temperature control is good for the quality of the lard.
@HowChandraDoesFood yeah, very good temp control indeed and much less labour intensive
Cosmo dog would lose his mind if we had a crock pot full of pork fat melting on the counter! 😂
@@deirdredoran5643 Haha! Pure torture!
Hey thanks for the video. Interesting.

@@sandrarutz6993 Thank you so much!🥰 It was handed down to me from a friend, and I can see why you want to know - I love it! The brand is Corningware. I hope that helps.
@@sandrarutz6993 I found it! a.co/d/fwuAboh
I am trying to think of a way to use sugar beet pulp after making molasses, and thought it might be an interesting replacement for zucchini. I am new to baking, and I also just got my first sourdough starter going strong. Your experimental style has given me some fun ideas... thx!
@@MathAndSpanish I love that idea! I hope you will send me a picture of the bread or tell me how it goes. Also, I didn’t know I had a style until you pointed it out, but I think you’re right about it- thank you!😂

Bread was really good!
@@JoePo1982 You really liked that bread!
Yum Yum Yum! I can't wait to make some cinnamon buns for Thanksgiving.
So much fun to make!! So much fun to eat!!
I stole a haloween pumpkin for the second year. It is very hard to peel. Much force is needed. I wonder how the carvers didn't chop their fingers off if they used a knife and not a drill. The normal way to eat a P, is to make a soup/porridge with coarse flour or rice grain and milk. Grate it in a machine for that. It works, nice yellow color, but needs sugar to compensate or the lack of taste. Once it's grated, you can eat a few spoons. But cooking it by itself without grain is meh. The seeds don't seem to be edible. They have a hard shell. We would never eat the seeds even from a shop P.
The cinnamon buns were awesome!
@@JoePo1982 Highest praise!
Good for you! You must feel great!
Hello, I love your channel, but I started doing low carb! I've lost 30 pounds. who hoo. But I'm still on the low-carb diet until I reach my goal weight. Unfortunately, I can not make any of your delicious recipes for a while!
Yum!! What's your ratio of cashews to water for your creamy milk?
I do 1/3-1/2 cup cashew pieces, soaked per 4 cups water. It’s a little less water, because I blend the soaked cashews with about 2 cups water, pour it into a quart jar, and then top it off with water.
That looks satisfying and your counter looks lovely!
Aw, thank you for noticing my countertops! I love them.

I have a question plz. Why did u cut a slit in the hotdog buns before freezing?
I like them to be ready for eating when I thaw them, and we like the kind of hot dog with a slit in the top rather than from the side.
You don't like quinoa!? It's maybe my favorite grain :) I definitely want some peanut noodles now.
@@deirdredoran5643 Really?! I wish it was my favorite grain - such a healthy one. I was thinking about milling it up into flour and using it that way somehow…
@@HowChandraDoesFood I do love it! Have you tried toasting it before the boil? I toast it in the pan for about 5 minutes before adding the water. It makes the grain taste more nutty after you boil it.
