The cauliflower miso roux sauce with the sweetcorn is such a great idea, very adaptable to a vegan recipe. I like your videos because you always make what you like but break it down into different techniques and flavour profiles etc. which anybody can adapt to their own tastes. A true teacher!
I gotta try this weekend. I'm always trying to pack more veggies into a tuna casserole. I like to use leeks, fennel, wilted cabbage and dark leafy greens (collards, spinach, kale, etc), and an abundance of fresh herbs like tarragon, dill, and cilantro.

Dang it is nearly midnight here and my tummy is grumbling after watching this. I am soooooo gonna make this tmrw!!!.. Update: Tried it and LOVE IT!! I followed everything cept that I sauté the garlic (skinless), I love garlic so much I find it sacrilegeous to just throw it away. But that's just me so.. I also add few dashes of hot sauce before adding the cheese and now everyone is begging me to make some more woohoo.. A gazilion thanks Marion for sharing the recipe! 😘😘

Hi Marion, I am sold on putting miso in things as it kicks things up a notch as you have shown. I cannot think of making a homemade spaghetti sauce without miso and soya sauce anymore! Oh, and the peanut butter cookies as well!

Made this tonight and it's one of the best tuna bakes I've made! That miso just elevates it! I upped the vegetables and added frozen peas and corn instead of fresh corn. Also added white onions and celery for some texture. I didn't have chives so I added chopped parsley after it came out of the oven. The written recipe says to add 'shiro miso' - is that white miso? It looks red in the video. I subbed gruyere cheese with Tasty and it's still great - will try with gruyere next time! More recipes Marion!

Novice question here - will it keep well in the freezer for weekly meal-prep purposes? Looks amazing and easy to consume for weeknight dinners or office potlucks
I used to make Tuna Mornay in batches for dinners when I did shift work - it will definitely keep in the freezer for several weeks (unless someone else helps themself to it). Just thaw it out in the fridge for day before reheating, reheat low and slow so it heats all the way through. If you want a crispy topping it probably should wait until you are reheating. A plain cheese topping will probably survive microwave reheating.

I wonder if subbing the cauliflower with broccoli would be just as good?
Broccoli would probably be too watery. Cauli seems more starchy hence why it become more creamy when pureed.
