Mandy, a belated, heartfelt welcome to the United States. You have recently mentioned homesickness a couple of times, so I know it must be very real and difficult. All adults in my household live with hearts and feet divided between countries, so we know how challenging it is and often, very painful and even profoundly sad. It is hard for people who have not experienced this to understand...and how strange is it to feel lonely, even when surrounded by well-meaning, loving people? The cultural adjustment period is difficult even when not in a pandemic. You will find your groove here, it just can take a long, long time to feel connected. My biggest recommendation is to just stay patient, and don't make any big decisions in the next year while you are homesick. (My husband and I are from two different countries, so it took us an extra long time to adjust to our life together.) Hopefully this work you are doing will help you....because I know that many others, like me, are in love with your warm, knowledgeable presentation and incredible talent. Thank you so much, you have really helped me and inspired me to expand my Chinese cooking. I now have a long grocery list of Chinese ingredients that I need to buy so that I can try your recipes! I adore grilled/ baked fish. I miss my favorite very much. I'm sure you would consider it common however, it is delicious. It's tilapia with garlic and maybe teriyaki based? If anyone else is curious about slitting the fish's sides (as I was), apparently when grilling whole fish over flame it's considered best practice to slice the thick, meaty sides down to the spine a few times per side to help the whole thing cook evenly.

This looks so very delicious! I've one question; can I use the oil from the Lao Gan Ma chilies in oil with black beans? I bought lots of large jars of these chilies just before Covid and I still have 8 remaining. I make my own chicken dumplings and add shredded carrots and red and green bellpeppers to the filling; it's very delicious and I love it with the Lao Gan Ma chilies! I again learned something very important: soaking the dried peppers in water before adding them to the oil. Thank you Mandy for such wonderful recipes. God bless you 🙏

Looks a bit like a fish dish we had in Chengdu, especially with the stem lettuce. I thought it was some strange sort of cucumber. Deep dish and all and tons of spices and Chili peppers - totally the same. It was so spicy I had to wheeze after a first bite. Even the vegetables were on fire. I cried a lot, it was hard to breath but I ate it..
I usually don't eat fish because of the bones, but your recipe for this fish looks absolutely delicious 😋. I think I will try this one with my family. Thank you

I fell in love with lotus root when I started making pork rib and lotus root soup, but I'm curious about something. My lotus root always turned pink after I boiled it. Is that normal/supposed to happen?

1--cooking and baking is not easy job; indeed, it's a heavy labor work. Anyone in her right mind will try to stay away from kitchen since I, myself, out of my breath in the kitchen works. 2--then, why I have kept trying that hard in kitchen duties? Because, I believe Chinese people are the greatest lucky ones in the world. No one can make food that beautifully great as the Art of Food in the world. 3--It's not so much of the stupid EATING, but the way, the artistic way of making the foods. It takes totally talented creative skill to make simple food into beautiful art, which can be proudly putting onto the table to enjoy it. 4--I have almost failed every dish I've ever tried; e.g., tofu cooked but not good at all, meat balls fall apart, fish just not eatable... although I do exactly what you artists teaching us on youtube... 5--I think, if there's anything I can do meaningfully, that's the Chinese art of cooking and baking although my skill is not that good at all. lol. 6--thanks for teaching and sharing. appreciated it.

Try using tilapia or catfish neither have a lot of bones.

Lotus root will change color if oxidated, it is normal and safe to eat.
