      A este chico le dijeron, el Epazote, el chayote, el cilantro y el tomatillo son muy típicos en la comida mexicana, pero nunca le dijeron cómo se preparaban.
      1) el epazote tiene un sabor muy fuerte, sólo se usa para condimentar, no es un ingrediente per se, mismo caso con el cilantro
      2) Cuando puso cebolla junto con el tomatillo pensé inmediatamente: va a hacer una salsa verde ... pero no, lo agregó todo junto!, el tomatillo simple y sencillamente no se puede comer así, es muy ácido.
      3)El Cuitlacoche tiene un sabor muy fuerte y con caracter, mezclarlo con todo lo que encontró en el mercado es de las peores cosas que se pueden hacer.
      4)El chayote preferentemente se pone a cocer, jamás lo he comido asado.
      También vi hace poco un video donde hacen tepache y no sólo no usan piloncillo ni clavo de olor sino que además le pone azucar morena y chile manzano ¬¬°! Está padre que tomen elementos de la cultura y gastronomía mexicana, pero sería más correcto decir que es una versión propia de un platillo mexicano.

      No porque solo tragues tacos y guajolotas, y creas que la gastronomía mexicana se reduce a eso vas a descalificar la comida que hizo, son ingredientes mexicanos y procedimientos mexicanos= comida mexicana. Sea hipster o no.

    Hearing someone from a popular food channel mention epazote, quelites, and huitlacoche is so awesome, I don't necessarily care that much for these ingredients but they're very rare and even Mexicans often don't know about them.

      There are a lot of ingredients common in the US that are hard to find in Mexico. It's not that we have limited horizons, just different ones.

    Even though it's not the kind of quesadillas you'd find in a market in CDMX, I kinda like these ones. On the salad, it's a matter of taste but I like tomatillos and chayote cooked. In general I dig into this recipes. BTW I'm

      I use it on a regular basis and at the most once or twice I've had an incident with it, both because distraction
      Still, my fingers are complete, no missing pieces

      You're pretty lucky then. I accidentally hit the blade on my mandolin with the slightest force while washing it; the tip of my finger came about 1/2 off.

    1. QUELITES: I could be wrong but that looks like what we call SALAD BURNET in America. It's very fragrant, smelling similar to cucumber.
    2. Excuse me for being nosey, but seems to me that a WOK would serve your grilling purposes much better; you're losing stuff over the side of your pan. Anyhow, your cooking looks good, and I would love to try the huitlacoche sometime.

    The Amaranth/Lamb quarters are hard to find in stores in the states....because i think most people know it as a weed. it grows aaaaalll over my lawn in the summer here in western NY. Once I learned what it was, i just let them go and pick em to add to salads.

    bon appetit I have been having trouble over and over opening your videos. It doesnt load or start at all, this does not happen to any other channels.       Mario is right, the tomatillo is non-toxic and perfectly fine eaten raw as it is completely ripe despite being green in color. The ones that contain solanin (the toxin) are unripe tomatoes (of any kind), which are also green.

    Not real Mexican food .... NO SALSA ??? The cheese always goes on the tortilla first. It's called quesadilla for a reason everything else gets added on after the cheese is melted. I can make a better quesadilla with a salsa Verde, beans, and rice. Now that's Mexican food at it's best !!!!

    I wish you wold stop the mexican food videos!!! There are NOT market quesadillas, you are mixing too many herbs (which do not mix and we DON'T use together), beginning with the treatment for the vegetables, the very small green tomatoes are not the same, they are "tomate milpero" used for sauces made in molcajete! You treated the Huitlacoche badly too, please ask / talk to people about how to use! In short, your meal was a mess, NOT anthing we would make. I've never understood how
