Just some notes on the comments that worry about hygiene. 1. Worker boots are always sanitized daily and used only in that room 2. Floors are also sanitised daily so it is much better to put it on sanitized floor then on some support that hasen't been washed few days. 3. Do you really believe in gloves as hygiene? People are touching everyting with the gloves and wear them whole shift. Hands are washed more frequently, and are more clean (if you do have OK nails). 4. Also, there is salt in the product to prevent any bacteria growth, and at the end, you always cook your food before you eat. So, just relax and do not worry. If you go some big industries to see how they work, you would never eat the meat again. So, please, this is totally hygienic and OK.
+Danny Black They are pulling back expired products from the shelves, grind it, and reprocess it again. Usually that revoked product share in the end product is about 10%. And I do not want to talk about bad hygiene there... They are relying to much on the pasteurisation process and do not care to much.

I usually dont wear gloves...run several handtmann stuffers (vacuum fillers).. and a number of other equipment (GMD, Poly Clipper, etc.. grinding/mixing.. packaging machinery.. all of it) sausage is sticky and the casings are hard to handle while wearing gloves, so some of the operators are allowed to not wear gloves.. FYI, I've already washed my hands 3 times before getting to my work station, and have walked through at least one boot wash station... the whole plant is washed and sanitized daily, right down to the floors in the drain.. although putting the tub on the floor could be seen as unsanitary.. in my plant it is a golden rule that any product that touches the floor is inedible, any equipment that touches it needs to be washed

There's nothing inherently wrong with sausages. In the US, manufacturers have to distinguish between "pork" and "pork products". I have in my freezer commercially-produced chorizo sausage, and the ingredients include "pork, salivary glands, lymph nodes". Yep. You read that right. In this video, we only see diced meat; could be pork butt, or it could include the pieces parts I mentioned. That being said, what you see are sausages being produced for drying - hard sausage, like salami. Some, like sopresatta and salami, the manufacturer adds wine. We didn't see that here, so I'm guessing these are some other type of dried sausage. You can tell because they are to be hung - likely, in a smoker or drier. The sausages must age, and I'm guessing that power they added contain the nitrates that inhibit bacterial growth. There is Prague Powder #1 and Prague Powder #2, the former is used for sausages that won't be aged. The problem with these cures is that they contain nitrites. When nitrites are oxidized - either by metabolism in our body, or by cooking - they convert into nitrates and other chemicals, which are carcinogenic. That is why dry sausages and similar charcuterie should be eaten in moderation - less, if possible. Definitely not a health food. On the other hand, if the sausages are fresh - as in Italian sausage, or chorizo, or bratwurst - then you don't add cures - you cook the sausages and then eat them. These are the safest to eat, because there is no nitrates or nitrites added to them - there's no need. This can be a very healthy option... but read on: Having said all that, salt is ubiquitous in nearly all sausage - dry or fresh. They tend to add a lot of salt - only for taste. As you might be aware, salt is not exactly a healthy option for most people - certainly not the amounts put into sausage. Of course, you can get low-sodium sausage, but you really won't like the results. There are some who can make fresh sausages with less sodium and taste reasonably okay, they're just adding lots of spices to it. Chorizo is great for this, because they are typically spicy anyway (and hot) and this can hide that lack of salt. So this video is showing how dried sausages are made. They did not show what goes into making hot dogs. This, too, can be a great experience to watch, but, I wouldn't want to watch what goes into commercial hot dogs. Making your own hot dogs is better, and that's more in line with things like knockwurst, blutwurst, etc. These are also fresh and generally made the same way as the other; the difference is that these are much more finely ground. They'll grind down several times before stuffing. (by the way... blutwurst taste great, but, one prominent ingredient is blood. So gross factor is high here. Knockwurst, on the other hand, is just finely ground pork, veal, and spices.)
