  • I express my e.l.f. through cooking and this is one of my favourite pastas to make for my friends! And thank god for the @e.l.f. Cosmetics stay all night setting mist to keep everything in place whilst I'm cooking. How do you express your e.l.f.?
    Firecracker carbonara
    Serves 2
    100g Guanciale (Or Pancetta Or Bacon)
    4 Cloves Garlic
    250g Spaghetti (I Used Bucatiini)
    3 Egg Yolks
    500g Parmesan
    1 Tbsp Gochujang
    1 Tbsp Crispy Chilli Oil
    1 Tsp Honey
    1 Tbsp Soy Sauce
    Small Handful Of Coriander
    Cut the guanciale into small cubes, then bash the garlic and roughly chop.
    Get your spaghetti cooking in very lighted boiling water - you don’t want it too salty as we will be adding soy sauce. Cook until al-dente.
    Whisk together the egg yolks, gochujang, 1 tbsp chilli oil, honey and soy sauce. Grate in the parmesan and whisk together. Add in 100ml hot pasta water and whisk.
    Add the guanciale onto a cold pan and heat on a medium heat for 8 mins to render out the fat and make them crispy. Drain out the pork fat and reserve for later. Add in the garlic and cook for 1 min.
    Pour in some 100ml pasta water to stop the garlic browning and toss in your spaghetti sauce. Turn off the heat and slowly add in the parmesan sauce tossing consistently. Turn the heat on low and continue to toss until you create a thick glossy sauce. Season with more soy sauce if required.
    Finely chop the coriander.
    Heat up the reserved pork fat and add in the coriander to crisp it up. Then add in the remaining 1 tbsp chilli oil.
    Plate up your pasta and grate over more parm and drizzle over with the coriander chilli oil.

    Seema- I really enjoy this series. Thank you for sharing it with us.
    I have 1 suggestion though, could you slow down while speaking? At the beginning of this video, it was a little hard to understand what you were saying. By the middle of the video, you slowed down enough that I could understand everything you said until you finished the video. I have a very thick New York accent & when I speak fast, only fellow New Yorkers can understand what I'm saying- LOL. I look forward to your next video. Could you post your recipes on your website? Thanks.
