Nasubukan nyo ba ang fennel seed spice or 5 spice powder or ginger powder with green onions pang paneutralize ng lansa (gaminess) ng karne? How about lemon grass or dried ground orange peel ? In Vietnam and neighboring countries , they use Keffir lime leaves ground into a powder which I do in my spice /coffee bean grinder.
You have given me several ideas on how to add flavor to crispy lechon pork roll which I haven't tried yet. This pork roll seems achievable compared to pork belly lechon( Siu Yuk by the Chinese) very popular these days. The Italian version is called porchetta.
