I'm not local but I lived there many years and raised a family there. What you are doing right here is what I miss the very most. Even as a Haoli, if you bring the right attitude, locals are very friendly. I hope they made a real Hawaiian tako poke with limu ogo for you. It's imitated everywhere on the mainland and I haven't seen one get it right yet. Tempura looked ono bruddah!
Great Video AGAIN, Thanks... My local Chinese restaurant owner told me to use an egg in beer batter. I tried it once and never went back. It's: ½ cup Bisquick or Flour ½ cup beer 1 egg 1 to 2 TBSP of any seasoning I use Old Bay

You should try a style of Tamaki that, as far as I know, I came up with. My Wife (this is her husband on her account lol) grew up on Guam. Her favorite food is Chamorro stuff, so I learned how to cook it. I kind of did a fusion of their Kelaguen style with a hand roll. I used Yellowfin Tuna, but skipjack or any other should work. Cubed it up. Marinate in a mixture of lemon juice, lime juice, soy sauce, chopped onions, a bit of EVOO, a sprinkle of good sea salt (not much because of the soy sauce used), and chopped Boonie Peppers (native peppers that grow in the boonies on Guam). I believe I marinated it for like 30mins. Basically a Chamorro take on ceviche style of "cooking". Then use it as the contents for the Tamaki. I think you might enjoy the flavors. We found it absolutely amazing! Keep up the great videos! I find a lot of inspiration for my dishes in them! Edit.. If you can't get a hold of Boonies Thai long hot peppers will work. Or get a hold of me and I can send you some dried Boonies as I grow them every year. Fresh are better though.

pro spiny lobster cleaning life hack: break off the first inch orso off of the spiny antennae, and then break it from the head. Take it and put it up the butt at the base of the tail (obviously after they are dead), twist as you go up about 4 or 5 inches, and then pull out without twisting. If it doesnt devein the entire vein or it doesnt come out when you pull, you'll be able to pull it all out it 1 go out of the front part of the tail. Lets you keep the tail completely whole.
