I was finding myself needing to go to the store with no meal plan way too often. I was burnt out on it. I sat down one day, and made a meal plan for a month. I recycle through the same plan now EVERY month. It was the best thing I could have done for myself😂

I don't meal plan. Just keep stocked up when things go on sale. It's cheaper I think.

@@brg2743 It’s not about what’s on sale for my family necessarily, it’s what’s whole and healthy.
My go to meal is Beanie Weenie Tacos. I make refried beans from a can of Pinto beans. SUPER easy (2 tbsp of olive oil, garlic powder, cumin, chili powder. Heat and drain can of beans but leave a little liquid. Then pour into heated oil, allow to boil on med high heat. Let it boil and stir so it doesn't stick, for about 3 min. Turn temp down and let simmer until liquid is just below top layer of beans. Smash, stir in some cheese). While beans are simmering, cut up hotdogs, put in a pot with a can of diced tomatoes with green chili's. Tsp each of chili powder, cumin, and garlic powder. Cook until hotdogs are done. I use Nathan's brand because they are beef and don't get soggy. Then layer beans, some Mexican cheese, and a spoonful or two of drained hotdogs in a tortilla. SO GOOOD!! I've got it down so well now, it literally takes 15 min from start to finish.
I absolutely plan meals according to weather! And I plan According to work schedules.

My favourite way to cook risotto is in my Dutch oven....in the oven. Just saute onion,garlic, (plus meat or veg), risotto rice on the cooktop, then add all the liquid at once. Bring to the boil, pop the lid on and then into the oven (350deg) for 25-30 mins. Remove from oven and stir through a little butter and parmesan. Turns out perfectly every time and I don't have to stand and stir for ages 😉
We tried the Priano Alfredo sauce last weekend and I didn’t love it but the rest of the family gobbled it up. Basically, mixed reviews. But I doubt I’ll buy it again unless I’m in a pinch.
Also, my fav tip for on-the-fly meal planning is to divide my cart into quadrants/sections and put meal items together (rather than grouping by category like veg, dairy, etc). It helps me to not miss an ingredient.
It’s about the flavor of Alfredo for my family. One they will eat, the other they love.
Don't be scared of risotto, you can dump a load of liquid in and just cook.low and slow, just mix it regularly and don't let it get dry x

Look for green vines instead of brown. Brown stems pass on them for the week.
thanks for that cucumber tip, because I have absolutely had them go slimy and gross within a short time of buying. My son also loves these and the minis make it easy for lunch packing

I recently picked up one of these take and bake pizzas for the first time. Normally I make pizza from scratch, but I didn't have time that day and thought ordering would be too expensive. As life goes, we actually didn't even have time to make the pizza that day. Next day we visited relatives and came back almost in the middle of the night - We were so glad to have that tasty pizza ready in no time! I would never have bought it without you!

Ravioli, especially sausage, are great with just a sauce of olive oil/butter, garlic, salt,and sage/parsley, topped with shredded parm. And oh so easy!

Quick breakfast for your kids. Guacamole on toast. It's the avocado toast of those who shouldn't use knives or are time crunched. They also make it in a squeeze tube which can be pricey but per oz it is cheaper than the singles and it doesn't oxidize.

So glad I can help! There are lots of great meal ideas that don't require much cooking. I actually cook a lot less in the summer, and a lot of my meal content are quick things like various sandwiches, wraps, salads, and things we can throw on the grill or in the air fryer. :)

Those sausage raviolis are very good! I absolutely agree with planing for one extra meal. For too long I kept so stuck to the meals I thought we needed and would end up having a night or lunch where we had nothing to eat and no one wanted sandwiches. Also a good way to stretch the days between grocery store trips, something I’ve learned from you.
So glad you posted this! It's real. I can often overthink my meal plans, especially with a strict budget and somewhat picky eaters. So when I don't have one, shopping on the fly is hard! 😅 Great tips and ideas. ❤

I always look at the weather when doing my meal plan too. Especially if I'm craving soup. I look to see which day is the coldest or if there's any rain LOL

I focus on purchasing sale and clearance items which feature heavily in my meals.

We really like the Alfredo sauce. My husband doesn’t like red sauce and our middle daughter has food aversion issues, but loves it. I get the garlic one.

I am a meal planner but this is exactly what happened to me this week.😅 I bought all or most of the good sale items at my favorite grocery store and meal planned as I went. I totally look at the weather forecast too! Especially now that we are getting some nicer weather and can grill out more.
I found those soup mixes reduced at my Aldi too once, a year or two ago and I continue to look every single time for them at a low price again. Nada! They were so good. I did doctor them up some. The Aldi pork carnitas seasoned pork shoulder is a favorite of mine. It is so easy to cook in the crock pot, and we actually prefer it over rice with a side veggie vs: on a tortilla. The BBQ pork one is good also, which I had to grab once when the carnitas was sold out! We like that over rice as well. Weekly Aldi shopper here!
Meal plan with weather.Like today is 43,so nice veggie stew with drop biscuits.When it's 70, macaroni salad and fish filets.The hotter it gets cold cuts,cold salads,etc.Can't eat hot foods in summer.If I BBQ,like chicken,do it day before and eat cold from refrigerator the next day.When kiddos was around,cooked hot for them ,ate cold cuts.😅
I made a meal very similar to the tortellini soup for dinner tonight, mine didn't have sausage. I just put in tortellini, Italian flavored caned tomatoes and a few spoons of pesto.

I love to grill. The weather dictates how I plan a meal. I am in the Mid-South near Memphis. The weather is always an issue this time of year.
We grill a lot, too. Even in the colder months, my husband loves to grill stuff up! Actually, he prefers grilling in the colder weather to the warm weather.

Because of a medical thing, my doctor encouraged me to eat off of a specific meal plan for the last month. I've been listening/watching your videos while I work the last couple of weeks to meal plan vicariously through you. I think that makes me a little nerdy? :)

We love the Reggano brand spaghetti sauce and pizza sauce better than any other available!
I mix a jar of Aldi pesto (red or green) with a jar of Aldi Alfredo. Yum.
Mindy, always appreciate your honesty. My rule for meal planning is this…..pasta, soup/grill (depending on the season), beef/poultry or seafood, and a vegetarian meal. This approach helps me…..when like you……i just totally dropped the ball and menu planning did not happen! Sometimes life just gets in the way.

Hello Mindy Mom,yes i do check my weather app for the week then plan our meals accordingly. When we are busy with scheduled appointments and the weather is rainy and cool,that is a great crock pot soup for days like that. Momma said you'd have days like that!
I don’t really “meal plan” as such, but I have a rotation of basic recipes and keep ingredients on hand that can be used for multiple recipe variations. I usually buy seasonal fresh produce so it suits the weather. Sometimes I will cook from scratch and other times I just throw together an easy meal. I always use a shopping list and check online catalogues, shop over multiple stores and get the best specials.
I am partially brand loyal. Some items I want a brand name item, and others I will swap out for cheaper brands and store brands, especially for basic items.
I find having the flexibility works better for me.

I am in a season with a toddler and pregnant with our second, my bandwidth is shot around dinner time 😂. For now I am sticking to simple proteins, freezer veggies, and meals that can be easily done in one pan/pot or the slow cooker.
I also meal plan around the weather 😂. Its going to be chilly this weekend and I have potatoes that need to ve used, leeks in the garden, and I can throw it all together while kiddo is down for his nap.

I love the bagged salad kits and pizzas. Also love the pizza dough. We have used the dough to make a strom oli tye thing by rolling some lunch meat in it like salami and ham and provalone and then putting with marinara or italian to dip it in. You could also do honey mustard and turkey and cheese.

Nice tip on the mini cucumbers!! I usually do wash mine in a vinegar bath (4% vinegar) maybe i will try regular ACV or white vinegar at a higher percentage. There for a bit my cukes would go gross in like 3 days. That is a good price for the broccoli cheddar soup!! Aaaaaand the sea salt caramel cookies are THE BEST!!!! Aw yeh 💪🏼
I’ve tried the Aldi Bear Cree dupe for Broccoli cheddar and I’ll never but it again. Mostly tasteless.

Thank you for sharing because there are times I don't make a meal plan at home but make it on the fly. Stuff happens and you just can't get a moment to even think through what needs to be done.
The Priano Alfredo sauce is decent… very peppery which I’m not a huge fan of. Homemade is definitely better but if you are in a time crunch then the Priano gets the job done!
I check the weather because I plan whether I am going to use the oven or not according to the temperature. Our spring weather has gone from 80 F back down to low 60s F. so the weather is important.

That soup looks so good. I like putting the tortalinis on a salad and heating up ranch dressing and hot chicken on top. There is a restaurant that had that near me and it is my favory item there.
My local grocery store had their pepperoni pizzas for $0.97 last week! They're thin crust but absolutely huge! And so good 😋 I bought 5 and threw them in the freezer. They also had the Jimmy Dean sausage for $1.49. I almost never make a meal plan when I grocery store. I let the store tell me what I need based on what is on sale. I'll have to try that tortellini soup with the sausage I bought.
