I feel as if the condemned one was the most realistic in terms of first person visuals. The Dark murky flash representing disorientation and blinking is what makes it.
That or the one at 0:21, but the blood effect and such helps with the RE7 one. Personally, I'd have a little white flash on the screen. In my experience, there's a sorta flash like that which occurs when I bump my head hard enough. EDIT: The DOOM one at 0:11 has that white flash that I mean.
Doom is the one you should go for if you don't want to injure yourself. You're supposed to throw your opponent off balance and pull their nose (Which is soft) into your forehead (Which is really hard). That's a proper headbutt.
Your forehead is a pretty solid flat bone surface which interacts well with flimsy nose cartilage. Your hand is full of small bones, and punching correctly and powerfully requires the right technique. Anyone can headbutt a person, go try it. But punching someone correctly without hurting yourself is harder.

The shaking of the screen was good, but I prefer Doom for the flash and the blurring.
