I think it's because he is just a little bit silly and troll-y. The people who are either really reserved or really committed to fucking around for some reason don't get Lewis as riled up as someone who kind of is a little of both.

The conveyor being adjacent to the table with a condiment on it will automatically apply to the table. I am unsure if this is a bug/glitch or if Pedguin is correct that it is intended. I assume it'd work on any surface (probably counters) if it is intended, as it would be "within reach" of a customer.
It's not really a bug. It's more of a quirk. You can serve customers with an adjacent conveyor, regardless of whether it's actually moving or attached to anything so long as it is adjacent. The condiments are served in the same way as food, but not consumed like food is, so they don't get consumed when "served" from a conveyor
This is probably meant to be like those sushi restaurants where your food goes around on a conveyor, and you grab the one you ordered off of it as it passes
I think Ben is the secret ingredient whenever you want a nice, slow-boiling Lewis blow up, it's great.
