Try rolling the fish in yellow mustard before you dredge it in cornmeal. It gets rid of any gamey, mud taste. We do that with catfish with excellent effect. Also, Catholics (big C) love the shite outta mustard - the Irish love it too…in fact, it’s their recipe.
You mentioning whitefish and beer going together reminded me of when I read about the Limburger War years ago. It took places in Monroe, Wisconsin! They had a contest to decide which is the best snack: Limburger with beer or whitefish and beer. The judges got sloshed and couldn’t decide. That’d be something to cover.

Black cod à la Nobu's recipe is in my top five favorite meals. It's a toss up with King Crab for my number one. Sablefish (black cod) is THAT good when well-prepared.
