Your pasta making process was just like watching one of the episodes of Pasta Grannies! It just amazes me. Haven't actually tried making pasta noodles since I always find them arduous to do, but I'm not giving up on it yet. 😅 Would definitely try it one of these days.

After watching quite a few videos on noodle making I tried this one. It is straight forward and easy to follow. I've made it twice so far. After rolling out the dough I let it rest for ten minutes then cut out the noodles. When I do this the noodle does not stick to itself and I can unroll it easily. Then, if I'm not cooking the noodles right away, I hang them on a clean plastic hanger to dry for ten minutes. (do not use a wire hanger it is to thin for this). I dust the noodles with cornstarch first (my preference), then put them in a freezer bag and pop them into the freezer. I thaw them a little in the fridge when need for my jjajangmeyon or spaghetti then put the rest back is in freezer. So far so good. Now I don't have to buy noodles at the store anymore. Thank you for this easy to follow method.

Not a pie but a large square or rectangle noodle. 3 cups floor . 1 egg and water .Floor type. dose not matter , you use and egg as your binder. the more the tougher the chew . Made some the other day and all i had was whole wheat flour Just add another egg . They cook it in a chicken , ham, or beef broth that turns in to a gravy from the floor on the noodle . But the process is very much the same but no waiting, Role out and right into the pot . I like mine thick chewy . My Asian wife loves when i make it.
My arthritis has made a standing mixer a requirement for me, and I’m here to say it’s ok for you to use a standing mixer if you’re not able to be as BA as this beautiful lady! The noodles turn out PERFECTLY 🥰

Thank you for the illustration. I have seen other instructional videos where a small amount of "lye-water" or another type of alkali is used in the dough. My question is whether the addition of a small amount of lye-water or other alkali to the dough mixturewould make a difference. Thanks!

I'd like to chime in with Tatjana who inquired earlier about using buckwheat flour in this recipe-method, due to sensitivity to gluten. Also, if buckwheat isn't the best, can you suggest other types gluten-free flours that would work?
I tried this one and they were looking good. I made little rolls to freeze them and cook another ones, and they got sooooo stuck :( I tried to cook it but they were kinda see-through and stuck, messy... :'(

If I may? Use rice flour to roll the dough out, it doesn't absorb excess moister and the noodles separate much easier. Cheers

Corn Starch works as well, if one doesn’t have rice flour handy.
Does potato startch help keep noodles separate?
